Dehumidifier Definition : Dehumidify or dehumidification – literally means “pulling out or removing” the moisture/humidity from the air. The dictionary defines dehumidification as the process of removing atmospheric moisture. Methods of Dehumidification Air Conditioning – Dehumidification by increasing the total pressure or compressing the air Desiccant Dehumidification (also known as Chemical Dehumidification) – In this method a desiccant material or drying substance is introduced into the airstream to remove moisture Mechanical Dehumidification (also known as Refrigerative Dehumidification ) – It is the method of removing humidity by cooling the air to condense the water vapor

Desiccant Dehumidifier Most accepted system across industries Most energy friendly methods of dehumidification Function equally well at extremely low to very high levels of humidity It can maintain RH level as low 1%

MOISTURE PROBLEM APPLICATION OF DEHUMIDIFIER IN FOOD INDUSTRY

Indian Food Industry : Moisture problem confectionery products ,such as Chocolates, hard candies, chewing gums , are hygroscopic . In high humidity these products regain moisture and prone to mould formation. This inhibits the natural flow (sticks to the high speed processing and packaging machinery and the wrapping material) The processing thus slows down, creates a problem of hygiene, loss of production as well as loss in the final product quality.

Moisture Problem Uncontrolled humidity/moisture during the manufacturing and coating process of confectionery causes: ● Change in the structure/dimension of interface ● Grainy and irregular coating ● Increase in residual moisture content adhesion i.e. degradation of coating quality in the presence of moisture ● Sugar bloom and change in flavour.

Moisture Problem In processing powdery foods (health foods like juice concentrates, protein supplements, soup powders, cocoa as well as gelatines, dehydrated soft drink concentrates, instant coffee powders and milk powders) moisture in the surrounding air cause lumping or caking causing the tiny particles to stick or cluster together, thus inhibiting their free flow in the manufacturing or packaging process. Many granular or powdered materials are transferred to packaging via high velocity air streams. This process is commonly referred to as pneumatic conveying or just airveying. For food handling, the efficiency of transporting powdered, granulated or flaked materials by high velocity air streams is significantly improved by drying the air.

Solution Dehumidifiers lower the moisture content of the surrounding maintain RH as low as 1% at a constant level regardless of the ambient condition during the production, storage and packaging Moisture control is essential in every segment of the food industry in the spheres of Storage, Production,Packaging,Processing and Low temperature drying

FAQs What is the use of a dehumidifier? And where is it installed ? Dehumidifiers reduce the moisture from the air, making it dry. Dehumidifiers are generally installed in process-areas like pharmaceutical companies and drying equipment, where low humidity is required. Estimate the loss occurring due to wastage of food due to fungal growth, moisture or mould formation ? Almost 30-40% of fresh fruits and vegetables produced are wasted due to decaying or fungal growth (happens when proper storage facility is not provided) In India, only 2% food is processed from the total food production, the rest 98% is supplied in the market, out of which almost 48% is decayed. in developed countries, 70% of food produced is processed, which increases the shelf life of the food product .

FAQs There were instances when worms were found in a chocolate produced by a well-known company. What role can dehumidifiers play to avoid such happenings? That instant might have triggered due to a number of reasons. If there is an external force of insects in the food product, they can multiply if proper conditions are not provided. Second, there could be a possibility of the growth of insects from within due to wet surface areas. The vendors must have lowered guards and hence the quality conditions must have been missed. De-humidifiers play a role in creating hygienic conditions by absorbing water from the air.

FAQs India being an agricultural country, what can be the contribution of Bry - Air dehumidifiers to protect food grains from insects? In India grains are stored at Central Warehousing Cooperation or in the open with a plastic covering. In this process the grains at the bottom get spoilt. Food Corporation of India estimates that loss to be around 3-5%. Worldwide, storage is done in silos. Dehumidifiers are installed on these silos. Silos can prevent losses that occur during drying (moisture loss results in weight loss and the farmers get paid for a lesser quantity), during transit as well as losses that occur when the stocks in the godowns become old.

Application of Dehumidifiers-Food Industry Seed Drying and Storage Seeds are typically stored for planting and research Safe seed storage is necessary to maintain its germination potential and quality Case Study :Sementes Produtiva,Brazil Challenges faced by Semented Produtiva Low seed viability Low germination ability

Case Study :Sementes Produtiva,Brazil Remove moisture mechanically with refrigeration equipment RH level in chamber varied from below 50%(during dry season) to over 60% (during humid season) , required RH- maintain b/w 50% to 60% .Thus affected seed quality Energy consumption was higher Installed Bry -Air Desiccant Dehumidifier Maintaining seed quality by providing constant dry air at medium temperature all year round (minimized the risk of seed damage ) Significant Reduce in energy consumption Previous Practise Present Practise

Spray Drying Increase production from Spray Dryers by 30%....without increasing Capacity Challenges in Spray Drying Increase Through Put From Spray Dryers Up To 30% Without Adding Capacity Spray Drying Food – Coffee, Spices, Fruits & Vegetables, Herbal Food, Milk, Tea, Eggs, etc. Industrial – Ceramic Material, Paint Pigments, Chemicals, etc. Pharmaceuticals – Antibiotics, Encapsulation, Enzymes, Vitamins, etc

Spray Drier Throughput varies with outside environmental conditions Extra moisture in the inlet-air increases drying cycle time Varying outside conditions result in inconsistent powder quality Higher downtime due to sticking of material on Spray Dryer walls Stable & consistent Drying Conditions throughout the year with no effect of outside conditions Reduced dependence on operator for constant monitoring and parameter adjustment Increased efficiency and throughput – up to 30% in some cases Improved rate of solution by avoidance of the lumping caused by fine particles Challenges Bry -Air Solutions

Mushroom Drying and Packaging Moisture Control during Mushroom drying and packaging (currently it can only be stored for few weeks before diminishing quality) Effects of Uncontrolled humidity- Mold growth ,turn into a pool of black goop General recommendation : 0 degree C with below 30% RH Level Bry -Air desiccant dehumidifier (capable of maintaining dew point as low as -60 degree C ) Maintain optimum RH Dehumidifying system in conjunction with AC Increase self life of mushrooms by at least 6 months. Challenges Bry -Air Solution

Spices /Herbs A spice is a seed, fruit, root, bark, or other plant substance primarily used for flavoring , coloring or preserving food Herbs are the leaves, flowers, or stems from plants used for flavoring or as a garnish Effects of Uncontrolled Humidity absorb moisture from the surrounding air when humidity is high and become sticky The damp powder also sticks to the wrapping paper showing the process and creating hygiene problems It also decreases the shelf life of the product Causes of Uncontrolled Humidity The major  source of moisture is atmosphere. The spices are hygroscopic in nature and and hence can absorb moisture from the surroundings and human presence. Humidity Control for Spices /Herbs General Recommendation Spice RH(%) ,Temperature °C Cardamom 30 – 35%,28°C Dry Garlic 65 – 70%,0°C Dry Onion 50 – 55%,10 – 20°C Cinnamon 40%,15°C Chillies 18 – 20%, 45 – 50°C Bry -Air Solution Spices have to be dried at low temperature Bry -Air range of Dehumidifiers provide optimum drying at low temperature for all spices

Humidity control during concentrate processing ,packaging and storage Presence of moisture can result in : International Standards Formation of crust ,jamming in silos Blockage in pneumatic conveying system Mold and mildew growth Poor quality of final product short self life Bry -Air Solution Bry -Air desiccant dehumidification systems Dehumidification allows smooth power flow Kellogg’s,Cadbury,Nestle,Unilever etc.

Dehydrated Food Dehydrated foods such as onion, garlic, grapes, walnut, kernels , dates etc. Pick up moisture from surrounding air during processing, packaging and storage ,become soggy and start deteriorating Bry-Air Dehumidifier lower the moisture content to as low as 1%

Moisture Control During Honey (Uncured) Drying Widely used in pharmaceutical industry for its healing properties and sweet taste Sensitive to moisture in the surrounding atmosphere ,affecting its state and properties General Recommendation: honey is dried at 35 degree C to a moisture content of 19% and HMF (Hydroxymethylfurfural) of 25% Bry -Air Solution : Honey should be spread in trays with max. Thickness of 4 inches inside a close room Dehumidified air is then circulated inside the room (as per standards) Pack the dried honey in containers inside the dehumidified room to avoid moisture regain

Snack Food Snack Food such as potato wafers, corn chips, noodles etc. absorb moisture from the surrounding air during processing and become soggy. Presence of moisture also results in frost formation and sweating in the cooling tunnel in the packaging equipment. Bry -Air Dehumidifiers are used by leading snack food manufacturers to remove moisture from the processing, storage and packaging areas snacks retain their original crispness, taste and appetising look. They also help in increasing the rate of production.
