INTRODUCTION Colour might be a visual perception that enables one to separate identical objects by the intensity and the wavelength of light. Quantification of colour belongs in the field of Colorimetry Colorimetry is the science associated with the measurement of colour .Involves numerical system to accurately depict a colour Colorimetry has many real life applications in cosmetic, pharmaceutical and food industry.
Colorimetry plays a role in evaluating the effectiveness of artificial and natural colorants. By measuring the color of food before and after the addition of colorants, it helps ensure that the original appearance is restored to meet visual standards. Both natural and artificial color plays an important role in enhancing the color intensity, storage and quality control. In summary, colorimetry is a valuable tool in the food industry for assessing, monitoring, and enhancing the visual aspects of food, contributing to both quality control and consumer appeal.
OBJECTIVES Quantification of Colour Intensity Quality Control Monitoring Stability Optimization of Processing Conditions Research and Development
METHODOLOGY As the word colorimetry we can understand that it is made of two word color and metry which mean measurement and the instrument used for it is colorimeter. It is an instrument which measure the intensity of a light beam in the visible range of the spectrum(400-700nm).
Principle The principal used in this is Beer-Lambert law . according to Beer-Lamberts law, the absorbance is directly proportional to the concentration of the solution and path length of absorbing medium.
SIGNIFICANCE Colorimetry in food industry is crucial in various reasons: Quality control Consumer perception Proces control Ingredient evaluation Shelf life assessment Regulatory compliance
Real time applications include: Meat processing Baking and roasting Monitoring fruit ripeness Quality sorting in agriculture Dairy industry Beverage production This Photo by Unknown author is licensed under CC BY-NC .
