Hydrolysed protein : Hydrolysed protein is a solution derived from the hydrolysis of a protein into its component amino acids and peptides. While many means this exits most common is prolonged heating with hydrochloric acid. Sometimes such as pancreatic protease to simulate the naturally occuring hydrolytic process.
The primary goals of hydrolysed protein is to distrupt the proteins structure by breaking peptide bonds in amino acids chains to generate similar fragments. It is considered the most useable form of protein,& it gives faster results In the hydrolysis process we start with the intact protein for instance whey or casein It is digested by enzymes into smaller fragments.
Process of hp: Raw materials selection: Mixing Hydrolysis Inactivation Filtration & concentration Ultrafiltration Spray drying Packaging & storage
Raw material selection: * The production of prrotein hydrolysates starts with the selection of the protein substrate and enzyme. * High quality raw materials which pass through several quality checks before they are used in production process. Mixing: * the protein substrate is solublised in water at a given temperature pH of the protein solutio is adjussted to achieve optimal conditions Hydrolysis: the enzyme is added to the protein soluble and hydrolysis starts. Temp & pH are contimuously monitored
Inactivation: once the appropriate degree of hydrolysis is achieved the solution is heated to a target temperature. Filtration & concentration: this process facilitate to remove of any undesirable matter and guarantee a clear hydrolysed protein solution. Ultrafiltration : it reduces the endotoxins in the hydrolysed protein solution at a well controlled feed rate and temperature
Spray drying: finally the protein solution is concentrated and spray dried to yield a high quality consistent protein hydrolysate . Packaging & storage: protein hydrolysate are hygroscopic therefore, storage should be done in a sealed air tight container.
