ASAFOETIDA S.N –Ferula asafoetida Family-apiaceae Economic part used is oleogum resin obtained from thickened root and rhizome Asafoetida is the dried latex (gum oleoresin) exuded from the rhizome or tap root of several species of Ferula (F. foetida and F. assa-foetida), perennial herbs growing 1 to 1.5 m (3.3 to 4.9 ft) tall. The yellow style is deeply divided into three branches and the stigmata are bright red. Flowers are arising directly from the corms. S.N- Satureja hortensis Family- labiatae Economic part-stem leaf and flower An annual herb, Satureja hortensis is a low-growing plant that belongs to the mint family ( Lamiaceae ) and is related to rosemary and thyme it’s a highly aromatic herb and features a hot, peppery flavor with notes of marjoram, mint, and thyme. Its flavor is also similar to that of its perennial cousin, winter savory – although the winter variety has a slightly more bitter, earthy taste. It grows to a height of 12-18 inches and features thickly branched stems covered in narrow dark green leaves.
