❖RICE MILLING PROCESS
❖RICE QUALITY PARAMETERS

RICE MILLING
The rice milling is the process that helps in
removal of hulls and bran’s from paddy grains
to produced polished rice.

OBJECTIVE OF MILLING
1.Remove the husk
2.Remove the bran layers
3.Produce whole white rice kernels that
are
•sufficiently milled,
•free of impurities and
•minimum number of broken kernels.

RICE MILLING PROCESS
PADDY PRECLEANING
PADDY DRYING
PADDY DESTONING
PADDY DEHUSKING
HUSK SEPRATION
PADDY SEPARATION
RICE WHITENING
RICE POLISHING
SIFTING
RICE COLOUR SORTING
RICE GRADING

PADDY PRECLEANING
It removing all impurities and unfilled grains
from the paddy.

PADDY DRYING
It is the process that reduces grain moisture
content to level where it is safe for storage.

PADDY DESTONING
It separats small stones from the brown rice.

PADDY DEHUSKING
It removes husk from the paddy.

HUSK SEPARATION
In this processes husk are removed from the
brown rice.

PADDY SEPARATION
It separates the unhusked paddy from the
brown rice.

RICE WHITENING
It removes all or part of the bran layer and germ
from the brown rice.

RICE POLISHING
Ii makes rice more shiny and transparent.

SIFTING
It separates small impurities or chips from the
milled rice.

RICE COLOUR SORTING
Discoloured rice grains are removed off from
the like coloured grains by this process.

RICE GRADING
It separates small and large brokens from the head
rice.

INSTRUMENTS USED IN LABOTARY
Moisture Meter
Whiteness Tester
Weighing Machine
Vernier Caliper
Rubber Roll Sheller

MOISTURE METER
It is used for measure the percentage of water in
a given rice sample.

WEIGHING MACHINE
It is used for measuring the weight of given
paddy/rice sample.

WHITENESS TESTER
This instrument is designed to measure the
whiteness of rice.

VERNIER CALIPER
It is used for measuring the length and
thickness of rice.

RICE QUALITY PARAMETERS
Moisture content
Hulling percentage
Head rice recovery
Head yield percentage
Chalkiness percentage
Immature rice percentage
Cracked rice percentage
Broken rice percentage

Moisture content = wt. of paddy before drying ×100
wt. of paddy after drying

Hulling percentage = total milled rice ×100
total rough rice

Head rice recovery = total head rice ×100
total rough rice

Head yield = head rice recovery ×100
milling recovery

Chalkiness = wt. of milky rice × 100
wt. of total rice

Immature rice = wt. of immature rice × 100
wt. of total rice

Cracked rice = wt. of cracked rice × 100
wt. of total rice

Broken rice = wt. of broken rice × 100
wt. of total rice
