Food poisoning is an acute illness caused by the ingestion of the food or drink contaminated with either living bacteria or their toxins or inorganic chemical substances and poison delivered from the plant and animals. CHARACTERISTICS There is history of the ingestion of the common food. Attack of the many persons at the same time. Similarity of the sign and symptoms in the majority of the cases.
Infection Micro organisms muliply in the gastrointestinal tract and produce a true infection . Salmonella g roup of organisms , Shigella group .
TOXIN TYPE 1) when incubation period is short ( 1 to 6 hrs after consumption) Contaminated food and water Vomiting Present and fever absent. intoxication from Staphylococcus aureus and Bacillus cereus . 2) when incubation period is longer ( between 8 and 16 hrs ) Contaminated food and water Vomiting less prominent abdominal cramps are frequent and fever is often absent. BOTULISM Botulism is a paralytic disease caused by potent protein neurotoxins elaborated by Cloastridium botulism. Illness begins with cranial nerve involvement, and progression proceeds graudally to involve the extremities. Botulinum toxin, because of its extraordinary potency, has long been considered a threat as an agent of bioterrorism or biological warfare.
Cases may be classified as-
1. Food-borne botulism- from ingestion of preformed toxin in food contaminated with C. Botulinum;
2. Wound botulism- from toxin produced in wounds contaminated with the organism; and.
3. Intestinal botulism- from ingestion of spores and production of toxin in the intestine of infants (infant botulism) or adults.
Continue .. incubation period 18 to 36 hrs. Clinical Feature Botulism : diplopia, dysarthria, dysphonia, dysphagia. Weakness progresses, Nausea, vomiting, and abdominal pain may precede or follow the onset of paralysis. Paralytic ileus, severe constipation, and urinary retention are common.
