CHAPTER 1 BACKGROUND OF THE STUDY

BACKGROUND OF THE STUDY The popularity of coffee has raised concerns about its health effects, leading to interest in healthier alternatives like coconut. Coconut, known for its unique flavor and perceived health benefits, contains medium-chain triglycerides (MCTs) and antioxidants, potentially surpassing coffee in health advantages. In the Philippines, where coconuts are abundant, coconut presents an accessible option for beverage experimentation. A study at Reina Mercedes National High School aims to assess the acceptability of coconut grounds as a coffee alternative among students through sensory evaluation and consumer preference testing. This research seeks to introduce a novel and healthier beverage option to students, potentially leading to the widespread adoption of coconut coffee as a flavorful and nutritious alternative .

Statement of the problem 1.What is the profile of the respondents in terms of the following: Age Grade 2.What factors contributing in the acceptability of coconut coffee among Senior High School at Reina Mercedes National High School in terms of: Taste Aroma Texture 3.What are the significant difference in accepting the coconut coffee among grade 11 and 12 students?

Objectives of the Study To know the grade level and age of the respondents. To identify the contributing factors in accepting the coconut coffee. To know the significant difference in accepting the coconut coffee among grade 11 and 12.

Research Hypothesis HO1. There is no contributing factors in acceptability of coconut coffee among the senior high school student of Reina Mercedes National High School. HA1. There is contributing factors in acceptability of coconut coffee among the senior high school student of Reina Mercedes National High School. HO2. There is no significant difference in accepting the coconut coffee among grade 11 and 12. HA2. There is significant difference in accepting the coconut coffee among grade 11 and 12.

SIGNIFICANCE OF THE STUDY 1. To researchers they will have a better understanding of what end consumers need for the success of the beverage, as well as the potential size of the market for the coconut coffee drink. This insights will help other parties to develop their products and to determine their market strategies 2. To students by conducting the researches, the students can find themselves in the world of various drink options and may lead them to swap the habitual one for the new aspiring healthy drinks, like coconut coffee.

3. To teachers can hold discussions regarding the subjects of nutrition, health and consumer behavior that are connected to the topic of choice, thus, the learning process becomes more practical and connected to reality. 4. To school administrators the research could help those in charge develop information to resolve this decision and it could well present with a healthier coconut coffee beverage to be offered at the school cafeterias by comparison to others.

5.To parents Becoming aware of the reputability of coconut coffee makes simpler parental dilemmas concerning the beverages which are consumed by their children, because they would have availed themselves of the info which is essential for coming up with healthier decisions.

SCOPE AND DELIMITATIONS The researchers seek to identify the contributing factors in acceptability of coconut coffee among the selected 20 senior high school students in Reina Mercedes National High School. The research will focus on indentifying the contributing factors and significant difference in accepting the coconut coffee among the senior high school students of Reina Mercedes National High School.

CHAPTER 3

Research Method This chapter presents the qualitative research design the researchers used in crafting this study. It also presents the instruments used to attain the objectives of the study. It also includes the selected respondents which the researchers think suits with the formulation of the problem. It also contains all the procedures that the researchers undertook to meet the purpose of the conducted research.

Reseach Design The comparative experemental qualitative research was used in this study. It was the most appropriate method for the study since it aimed to identify the Acceptability of coconut coffee between the grade 11 and grade 12 students.

Respondents of the study The respondents of this study are the Senior high school students of Reina Mercedes National High School , S.Y. 2024-2025.  

Data Gathering Procedure In order to gather the needed data, the researchers will distribute questionnaires prepared for the selected 20 senior high school students of Reina Mercedes National High School. Furthermore, the researchers aim to know the factors contributing in acceptability of coconut coffee among the senior high school student.

Research Instrument      The major instrument used to gather the needed data was survey questionnaire which was contained of two parts: Part I composed of the personal  optional background of the respondents such as grade level and age ; Part II served as the factors contributing in Acceptability of coconut coffee among the senior high school students.        Moreover, the major instrument used in gathering data was an interview questionnaire and student-made test .It was prepared in terms of the study, which draws out the necessary information that best reveals the student-respondents’ profile, such as, name ,age .To determine the experiences of the students, a 10 -item interview questionnaire was made and administered smoothly. This survey type of questionnaire is about the development and acceptability of coconut coffee to help the researchers improve their product.

SOP 3. Significant Difference among Grade 11 and Grade 12 in Accepting the Coconut Coffee As the table shows on the followings pages there is significant difference among the grade 11 and grade 12 in accepting the coconut coffee. Hence, the alternative hypothesis (HA) is accepted.

CHAPTER 5

SUMMARY OF FINDINGS Overall, when combining assessments of taste, texture, and aroma, coconut coffee received high acceptance from both Grade 11 and Grade 12 students. Eight out of ten respondents from each grade found coconut coffee highly acceptable across all aspects. However, there were noticeable differences between the grades in their acceptance levels, indicating variations in preferences and perceptions.

CONCLUSION In conclusion, the research suggests that coconut coffee is widely accepted among senior high school students at Reina Mercedes National High School, with taste, texture, and aroma all contributing to its overall appeal. Despite some differences between Grade 11 and Grade 12 students, coconut coffee emerges as a favored beverage choice among the student population.

RECOMMENDATIONS To the future researchers we would like to recommend that this product will undergo to the Food and drug Administration ( FDA ).If they want to use this study Conducting awareness campaigns within the school to the students of Reina Mercedes national high school that participate to our organized campaigns that educate about the benefits and potential risk of coconut coffee consumption. Inform the consumers about the nutritional content and health impact of coconut coffee to make a better switch to those who have a health conscious.
