Introduction to Refrigeration

Refrigeration Refrigeration is “the production and maintenance of temperature of a substance / space at a lower level than the surrounding atmosphere by the withdrawal of heat.” The space may be interior of a household refrigerator, a cold storage box, an ice cream cabinet or any other enclosure. Refrigeration includes processing and preservation of food, removing heat from chemical reactors, cooling specimens etc .,

Application of refrigeration The largest application of refrigeration is in Air Conditioning. Comfort Air Conditioning is “the process of treating air to control simultaneously its temperature, humidity, cleanliness and distribution to meet the comfort requirements of the occupants in the conditioned space.”

Some of the other applications include: 1) Food Storage: Meat, Fish, Fruits and Vegetables are perishables and their storage life can be extended by proper Refrigeration. 2) Dairy Products: The chief dairy products - milk , cheese and ice cream need refrigeration for processing. Eg : Pasteurization of milk - Heating milk to roughly 73  C, holding for 20 seconds and then cooling back to 3 or 4  C for storage .

3) Beverages: Fruit juices can be made into a frozen concentrate near orchards and then transport it so that spoilage can be reduced. In brewing Industry, refrigeration controls fermentation, which is an exothermic reaction and preserves some of the intermediate and final products.

4) Chemical & Process Industries: Manufacture of chemicals, Petroleum refineries, Petrochemical plants, Paper and pulp industries, etc., Some important functions carried out here are , Separation of gases Condensation of gases Solidification of one component in a mixture to separate out the other Removal of heat of reactions to maintain reaction temperature.
