Ingredients 1/4 cup coarsely chopped fresh parsley

Ingredients 1 tablespoon extravirgin olive oil

Ingredients 1 tablespoon fresh lemon juice

Ingredients 1 teaspoon dried oregano

Ingredients 6 cups shredded Romaine lettuce

Ingredients 3 cups diced tomato

Ingredients 1 tablespoon capers

Ingredients 1 cup thinly sliced red onion

Ingredients 3/4 cup crumbled feta cheese

Ingredients 1 cucumber, peeled, quartered lengthwise, and thinly sliced

Ingredients 6 whole wheat pitas, each cut into 8 wedges

Preparation Combine the parsley, olive oil, lemon juice and oregano in a large bowl. Stir with a whisk. Add the rest of the ingredients, i.e. lettuce, tomatoes, onions,feta cheese, capers and cucumber. Toss well. Serve with pita wedges.
