When we talk about "career and business opportunities," we're thinking broadly. It's not just about getting a job in a bakery; it's about all the different ways you can contribute to and make a living from baking. 1. Identifying Diverse Career and Business Opportunities in the Baking Industry

What is baking? Baking is a method of cooking food using dry heat , typically in an oven . While an oven is the most common tool today, historically, baking was also done in hot ashes or on hot stones

Here's a breakdown of what baking involves and why it's a fundamental cooking method: Dry Heat: Unlike boiling or steaming, baking relies on dry heat to cook food. This dry heat transfers to the food, causing changes in its structure, texture, and flavor. Transformation: As heat penetrates the food (like dough or batter), it triggers a series of physical and chemical reactions. For example: Leavening: Ingredients like yeast, baking soda, or baking powder produce gases (like carbon dioxide) that get trapped in the dough, causing it to rise and become light and airy. Starch Gelatinization: Starches in flour absorb moisture and swell, contributing to the structure of the baked good. Protein Denaturation: Proteins (like gluten in flour or eggs) coagulate and set, providing structure and firmness. Browning/Caramelization: The dry heat on the surface of the food leads to browning (Maillard reaction) and caramelization of sugars, creating a desirable crust and enhancing flavor.
