Chicharrón de Chancho

Ingredients: • ½ kilo of pork ribs or pork belly • 150 grams of pork lard • ½ stalk of celery • ½ stalk of leek • 1 sprig of mint • 1 tablespoon of ground garlic

Preparation: First, cook the pork in a pressure cooker to make it faster. Then add celery, leek, garlic, mint, salt, and pepper. Cook for about 40 minutes (depending on the size of the meat). When the pork is tender, remove it and dry with paper towels. Season with salt, pepper, and lemon juice. Set aside. In another pan, heat the lard and fry the pork pieces until golden brown on both sides. Remove and place them on paper towels to remove excess fat. Serve with fried potatoes or yucca, onion salad (sarsa criolla), cancha, rice, and fried sweet potato.
