Extenal morphology Perennial herb with elongated leafy stems and horizontal tuberous root stocks. Rhizome - Stout and tuberous. Stem - Erect, leafy stem, 0.6 to 1.2 Mtr high. Leaves - Narrow, distichous, subscssile on the sheaths, linear-lanceolate, 1-2 cm wide and glabrous . Inflorescence - Spike Flowers - Greenish with a small dark purple or purplish black. Useful part- Rhizome Shape - Rhizomes are laterallycompressed , bearing short flat, ovate and oblique branches on the upper side, with bud at the apex. Size - Rhizomes are about 1.5*1.5 to 6.5cm. Colour -externally, it is buff coloured. Transversely cut surface shows well marked endodermis and stele. Fracture - Short and fibrous. Odour - Agreable and aromatic. Taste- Agrable and pungent.
Curing of ginger Ginger is marketed both in peeled and unpeeled condition. In scraped the epidermal layer of the rhizome is scraped off with the help of a sharpened bamboo-splinter and then washed in water and dried in the sunlight for 7-10 days.
