Lay the chicken breasts
on a piece of waxed
paper. Cover with
another piece of waxed
paper and strike with a
rolling pin until the
chicken is about ¼ in.
thick. Slice the chicken
into ½ in. wide strips.

Pour the oil into a large
skillet and warm over
high heat. Add the
chicken, shallot, garlic,
and paprika and stir fry
over high heat until
cooked through and
golden, about 3 minutes.

parsley and season with
salt and pepper. Garnish
