Ringkasan Buah-buahan , seperti stroberi , nanas, dan pepaya memiliki cita rasa yang beragam , dan merupakan sumber mineral dan vitamin yang sangat baik dalam makanan ( Rababah , Ereifej & Howard 2005). Antioksidan memeriksa kerusakan oksidasi dalam tubuh manusia dengan menyumbangkan elektron untuk menggantikan elektron yang hilang melalui oksidasi . Antioksidan menetralkan radikal bebas dalam tubuh manusia . Di antara banyaknya antioksidan yang ditemukan dalam buah-buahan , vitamin C memiliki peran penting dalam tubuh manusia . Vitamin C menyumbangkan elektron kepada radikal bebas yang dihasilkan dari oksidasi dan mencegahnya mengambil elektron ( reduksi ) dari molekul yang berguna dalam tubuh (Hickey & Saul 2009). Vitamin C diperlukan untuk pertumbuhan manusia dan perbaikan jaringan, tendon, ligamen dan pembuluh darah melalui pembentukan kolagen. Vitamin C bersifat sedikit asam dan sebagian larut dalam alkohol, serta tidak larut dalam kloroform, eter, dan benzena

3. Latar Belakang Stroberi adalah tanaman dengan famili Rosaseae . Buah stroberi mengandung banyak air dan serat , memiliki banyak biji kecil pada bagian buahnya . Buah stroberi umumnya berbentuk kerucut hingga bulat , buah yang muda berwarna hijau namun setelah tua berubah menjadi warna merah atau kuning kemerah merahan . Kandungan gizi disinyalir banyak terkandung dalam buah stroberi adalah vitamin C. Vitamin C merupakan vitamin yang larut dalam air, vitamin C sangat penting bagi tubuh . Peranan vitamin C dalam tubuh antara lain sebagai antioksidan yang dapat menangkal radikal bebas penyebab rusaknya sel tau jaringan pada tubuh . Berdasarkan hal tersebut , maka penelitian ini dilakukan untuk membandingkan kadar vitamin C yang terkandung pada hasil olahan buah stroberi berupa selai buah stroberi dan buah stroberi segar

4. Rumusan Masalah Bagaimana hasil perbandingan kadar vitamin C pada hasil olahan buah stroberi berupa selai buah stroberi dengan buah stroberi segar? Bagaimana cara mengkonsumsi stroberi yang baik agar tidak terjadi pengurangan kandungan vitamin C pada stroberi sehingga kebutuhan vitamin C untuk tubuh dapat tercukupi dengan baik ? 1. Mengetahui perbandingan kadar vitamin C pada hasil olahan buah strawberry berupa selai dengan buah strawberry alami 2. Mengetahui cara mengkonsumsi strawberry yang baik agar tidak terjadi pengurangan kandungan vitamin C pada strawberry sehingga kebutuhan vitamin C untuk tubuh dapat tercukupi dengan baik . Tujuan Penelitian

5. Pendahuluan Dari kegiatan penelitian ini diharapkan : Diperoleh nya perbandingan kadar vitamin C pada hasil olahan buah stroberi berupa selai dengan buah stroberi segar. Hasil penelitian ini diharapkan dapat memberikan informasi ilmiah kepada Masyarakat mengenai perbandingan kadar vitamin C pada hasil olahan buah stroberi berupa selai dengan buah stroberi segar, dengan begitu masyarakat bisa lebih bijak dalam memilih bentuk atau jenis makanan yang dinilai dapat efektif memenuhi kebutuhan antioksidan bagi tubuh dan dapat menangkal radikal bebas . Luaran yang diharapkan Manfaat Penelitian

Metode Penelitian 26 November 2023 – 2 Desember 2023 di Laboratorium Terpadu UIN Sunan Gunung Djati Bandung Waktu dan Tempat Pelaksanaan Alat yang digunakan dalam penelitian ini yaitu wadah , pipet tetes, kertas saring , buret , Erlenmeyer, labu ukur , corong , gelas beaker, saringan , gelas ukur , tabung reaksi , mortar dan alu, thermometer, gelas arloji , botol reagen gelap , kertas label, penjepit kayu , dan pembakar spirtus Bahan utama yang digunakan dalam penelitian ini adalah selai buah stroberi dan juga buah stroberi segar, dan bahan tambahan yang digunakan dalam penelitian ini yaitu iodin, aquadest , kalium iodide, natrium tiosulfat , natrium bikarbonat , dan indikator amilum Alat dan Bahan Dimulai dari pengambilan sampel dari selai buah strawberry dan buah strawberry segar, lalu pembuatan larutan Iodium 0,1 N, larutan Natrium Tiosulfat 0,1 N dan larutan indikator Amilum . Dan dilakukannya standarisasi larutan Iodium dan Natrium Tiosulfat , baru masuk ke uji kuantitatif Vitamin C Metode Penelitian

Cara Kerja Pengambilan sampel Buah Strawberry segar Pembuatan larutan Iodioum 0,1 N Pembuatan larutan Natrium Tiosulfat 0,1 N Pembuatan Indikator Amilum Standarisasi Larutan Iodium dengan Natrium Tiosulfat Uji Kuantitatif Vitamin C Cara Kerja Sampel yang berupa selai buah Strawberry dan buah segar Strawberry dengan konsentrasi bahan yang berbeda diuji kadar vitamin C nya . Data kemudian dianalisis menggunakan ANOVA (Analysis of Varians ) dengan 3 perlakuan masing-masing 4 kali ulangan untuk menilai adakah perbedaan rerata antar perlakuan . Hasil akhir dari analisis ANOVA adalah nilai F hitung yang dibandingkan dengan nilai F tabel . Jika nilai F hitung lebih besar dari F tabel , maka dilanjutkan dengan uji BNT 5% untuk menilai adakah perbedaan nyata rerata antar kelompok perlakuan
