Amarone della Valpolicella Classico Riserva Rino Sartori reflects the ability to find the right
blend of Tradition and Innovation.



VINIFICATION AND REFINEMENT
For the production of this wine, the
grapes are controlled right from the
initial stages in the soil, seeking to have
the right balance in the vine so that the
bunches reach perfect ripeness, before
being harvested by hand and placed in
plateaux for drying in the drying lofts. To
obtain this product, the wine is aged in
French oak barrels for approximately 48
months, during which regular
organoleptic controls are carried out. To
add value to the bottle, it is
handcrafted with a shellac seal.

SUGGESTED PAIRINGS
A great meditation wine, its elegant
and full-bodied structure accompanies
important dishes of fur or feathered
game, red meats and selections of
mature cheeses.

family, matured and acquired during years of experience.



VINIFICATION AND REFINEMENT
After careful selection of the best
grapes, they are harvested by hand and
then dried for several months in well-
ventilated drying lofts. This is followed by
fermentation in stainless steel for several
weeks and concludes with ageing in
French oak barriques for about a year.

Brut sparkling wine that originates from
grapes cultivated in the Prosecco

considerable value produced using
the famous Martinotti method, which
involves re-fermentation of the wine
obtained from the first fermentation.

SUGGESTED PAIRINGS
Excellent as an aperitif, it is a wine for
the whole meal that goes well with

a tray of medium-aged raw ham, with

DESCRIPTION
Grappa di Amarone comes from the
distillation of the noble grapes, skilfully dried,
from which Amarone originates. The grapes
are processed through controlled
fermentation with the addition of selected
oenological yeasts.
Ageing is done in small cherry and oak barrels
that give the grappa an amber colour and a
soft but intense taste.
Grappa Amarone has intense hints of spicy
aromas, ripe fruit and precious woods that
make the distillate an enveloping, warm,
intriguing and fascinating product.
It is excellent after a meal, on its own or paired
with dark chocolate or chilli peppers.
It is recommended to be served at a
temperature of 15-18° C in large glasses.

Extra Virgin Olive Oil

Olive oil is given the name ‘Extra Virgin’ when the oil is obtained from the
first pressing of olives. It is made up of particles of olives together with small
parts of the pit and of the pulp. This is why it is has so many sensorial aspects
and contains highly nutritional substances that make it an optimum
condiment, and is truly beneficial for our health.

The oil is made from olives that are handpicked just at the right point of their
maturation. As soon as they have been harvested, the olives are then
carefully processed in the mill in order to obtain a quality product with a fruity
and fragrant taste.

The olives do not undergo any treatments other than washing and crushing.
The pressing takes place using mechanical processes without the addition of
any chemicals, guaranteeing the highest quality of the product, which
maintains its natural unaltered properties.

Olive oil can sometimes have a cloudy appearance. This does not affect its
quality, on the contrary, it is a guarantee and it demonstrates that it has not
been filtered. Many people greatly appreciate unfiltered oil because it has a
more intense flavour and a pleasant aroma, making it a more genuine and
healthier product.

Unfiltered oil is like a new wine, it must be consumed sooner in order to fully
enjoy all of its qualities.

Over time, even an unfiltered oil may become ‘limpid’: this is due to the
natural filtering process, or to the natural settling of the particles on the
bottom of the bottle.

The oil has an intense green colour with a golden sheen. Excellent drizzled raw
on bruschetta, fresh vegetables, soups and as a dressing for salads.

We recommend storing the oil in a cool, dark place.

Valpolicella Classico is a Designation
of Origin wine obtained from typical
blends such as: Corvina, Corvinone,
Rondinella and Molinara.
The grapes, from the area of the
classic Valpolicella, are harvested,
crushed and macerated for 6-8 days.
Following vinified according to
traditional methods at a controlled
temperature in order to preserve its
typical aromas.
The Valpolicella Classico is a red ruby
intense wine, with a vinous, delicate
with a hint of almond, raspberry and
pomegranate. It has a good acidity
and a dry and harmonious taste.

DESCRIPTION
Valpolicella Classico Superiore
Ripasso is a wine obtained with the
ancient technique of “revision”
which consists of the double
fermentation on the skins of
Amarone Valpolicella wine. In this
way the wine receives from the
withered peels part of the aroma
which is typical of Amarone.
This process allows you to extract
color, sugar and flavorings from the
peels and makes this wine at the
same time enhancing the
characteristics of autochthonous
vines, as well as the aromas and
flavors.

DESCRIPTION
Amarone from Valpolicella is a
DOCG red wine produced
excusively in Vapolicella. The name
comes from the word “amaro”,
used to distinguish it from Recioto,
which gave birth. It happened
thanks to the discovery of an old
barrel of recioto forgotten in the
cellar which continued the
fermentation. So it was that sugars
are transformed into alcohol by
losing the characteristic sweetness
of the wine, which was then given
the name of “Amarone”.
As for recioto, the best bunches,
sparse (that is with the berries not
too close together), healthy and
perfectly ripe, are selected by
expert hands, only to be gently lying
on plateaux. These are then
arranged to bring in the fruit cellars
at the right drying the grapes for the
production of this precious wine.

DESCRIPTION
This wine, created and strongly
backed by Giammaria Sartori,
intends to better represent all his
passion for quality and his love for
the land.
In fact, C&G is produced only
with grapes growing in the
province of Verona.
When they reach the perfect
ripeness, best grapes are dried in
plateaux placed in fruit cellars for
a short period.
After crushing occurs aging in oak
barrels, where the wine loses its
sharpness.

VINIFICATION AND REFINEMENT
From Corvina, Rondinella and
Corvinone grapes, harvested in
September and October and
fermented slowly.
Valpolicella Ripasso is made using the
Ripasso method, which consists of
drying the Valpolicella wine on the
skins of Amarone or Recioto.
In this way, the wine receives part of
the typical aroma of Amarone from
the dried skins and is enriched with
polyphenols, enhancing its structure
and aromas.
This process allows the extraction of
colour, sugars and aromas from the
skins, enhancing the characteristics of
the indigenous grape varieties, as
well as the aromas and flavours.
The wine is then aged in wood and
finally refined in the bottle.

SUGGESTED PAIRINGS
It can be served with roasts, game,
stews, braised meats and savoury
cheeses.

SENSORIAL DESCRIPTION
Ripasso Classico Superiore is an
intense purplish-red wine with notes
of candied fruit, spices and vanilla
on the nose.
On the palate it is full-bodied, soft,
and very persistent, with notes of
violets, liquorice and ripe
blackberry.

VINIFICATION AND REFINEMENT
The grapes are dried and, after a
period of drying, are pressed.
This is followed by a final refinement.
After a careful and rigorous blending
process, both the drying process and
traditional methods come together
in the production of this fine red
wine.

SUGGESTED PAIRINGS
It is ideal with roasts, grilled meats,
spicy cheeses and dry biscuits.
It is recommended to be served at
18-20°C in a wide goblet.

This wine is obtained by drying
typical Veronese varieties, chosen
on the basis of our oenological
experience.
It is a symbol of youth and freshness
and is therefore an excellent
convivial and meditative wine.
Rosso Veneto is a red wine made
from hand-picked grapes. It is
elegant on the palate with hints of
black cherry, vanilla, chocolate
and chilli pepper.
It is rich in aromatic notes.
Ruby red in colour with garnet
highlights, spicy with cherry notes.

VINIFICATION AND REFINEMENT
The grapes are harvested by hand
and then dried in the estate's fruit
cellar. They are then pressed after
drying. Finally, the wine undergoes
an ageing process.
Amarone della Valpolicella
D.O.C.G., is a red wine obtained by
drying selected grapes, harvested by
hand and pressed at the time
indicated by the Consorzio di Tutela.

SUGGESTED PAIRINGS
It pairs perfectly with grilled red
meats, roasts, game and mature
cheeses.
It is considered among the most
prestigious roast wines on the
national and international scene.
We recommend a serving
temperature of 18-20° C and to
uncork it at least one hour before
consumption.

the estate's fruit cellar.
They are then fermented very slowly.
Maturation ends in French oak
barriques.

mature cheeses with its elegant, full-

Amarone della Valpolicella Docg
Classico Riserva encapsulates the
charm expressed by our passion in
producing a wine of excellent
quality.
This wine goes down in the glass with
a dark garnet red colour and little
transparency, with orange hues.
The bouquet is intense and
complex, where typical notes of
plum, cherry and morello cherry
alternate with dried fruit, liquorice
and spices.
A balsamic cloud opens a
decidedly broad and rich nose.
In the mouth it is soft and seductive,
warm and powerful, full and
persistent, with sweet tannins and a
balsamic freshness that allow it to
keep for a long time and to express
itself at its best after a few years of
refinement in the bottle.
