KINDS OF PIES AND PASTRIES
PASTRIES – ARE SWEET BAKED FOOD USUALLY MADE OF A CRUST OF DOUGH .
TURNOVER (EMPANADA) -A small pie made by folding half-moon s hape with chicken, ground pork, beef o r shredded vegetables. Can be deep f ried or baked.
EMPANADITAS -Same method is used in preparing turnover or empanada. Smaller than empanada and usual fillings is sweetened fruit preserves.
BAKED APPLE EMPANADA FRUIT EMPANADITAS
CREAM PUFF -A round pastry shell filled with sweetened whipped cream or with custard topped with caramelized sugar or chocolate.
HOPIA -A small round or oval pastry filled with sweetened ground mongo, purple yam ( ube ), pineapple, or sweetened ground condol with pork fat added to the dough.
TART -Same method is used in preparing single crust pie except that tarts are smaller and basically for individual serving.
BARQUETTE -Small boat-shaped pastry shell with sweet fillings. Boat tart is an example of barquette .

PIES -A PIE IS A DISH CONSISTING OF CRUST AND FILLING SUCH AS FRUITS OR MEAT BAKED IN A PIE PAN WITH EITHER SINGLE OR DOUBLE CRUST.
COBBLER -A deep dish pie consisting of fruit or savory filling poured into a large baking dish covered with batter, biscuit or dumpling before being baked.

PIZZA -Italian pie with a thin spread of tomato sauce with meat, sausage, green and red pepper, pineapple chunks, and cheese as toppings.

MINCEMEAT PIE -Pie that contains chopped apples, currants, raisins, spices and suet, with mutton or poultry.
SHEPHERD’S PIE -Meat pie covered with mashed potato, baked until golden brown.
