Lesson Objectives After this lesson, you will be able to: Identify the different table appointments. Describe the use and care of each table item. Differentiate formal and informal table settings. Appreciate the importance of proper table arrangement and etiquette.

Introduction What is Table Setting? Table setting means arranging table appointments in an orderly and attractive manner. It helps make dining pleasant, prevents confusion, and allows food to be served efficiently.

Importance of Table Setting Promotes order, neatness, and hygiene. Creates a good first impression for guests. Makes eating and serving food more convenient. Shows discipline, courtesy, and attention to detail.

What is Linen? Linen refers to the different types of fabric used to cover and decorate tables and chairs. It protects surfaces from spills and scratches while adding color, texture, and theme to the dining area.

Table Cloths & Napkins Table Cloths – Large fabric pieces that cover the entire table. They protect the table surface from stains and give the dining area a polished and formal look. Tablecloths also set the mood by matching the theme or occasion. Napkins – Small square cloths used to wipe the mouth and hands during meals. They can be folded into decorative shapes to enhance the table’s overall presentation.

Place Mats & Table Runners Place Mats – These are rectangular or round mats placed under each diner’s plate. They protect the table surface from heat and stains while giving each guest their personal space at the table. Table Runners – A long, narrow strip of fabric placed in the center of the table, often layered over a tablecloth. It adds contrast, design, and highlights the centerpiece.

Buffet Covers & Chair Covers Buffet Covers – Large, decorative cloths used to cover buffet tables. They make food displays look more appealing and professional while protecting the table underneath. Chair Covers – Fabric covers placed over chairs to make them look uniform and elegant. They also protect chair upholstery and are often tied with ribbons or sashes for decoration.

Importance of Using Linen Adds beauty and sophistication to the table. Protects surfaces from damage and stains. Sets the tone for the event — formal, casual, or festive. Helps maintain cleanliness and organization during dining.

FLATWARE (CUTLERY) What is Flatware? Flatware, also called cutlery, refers to the utensils used for eating, serving, and cutting food. It includes spoons, forks, and knives. The proper choice and arrangement of flatware help diners eat comfortably and neatly.

Table Spoon & Tea Spoon Table Spoon – A large spoon used for serving or eating main dishes like rice, soups, or stews. It is also used when sharing food among guests. Tea Spoon – A small spoon used for stirring beverages such as tea or coffee. It can also be used for eating light desserts like pudding or yogurt.

Dessert Spoon & Serving Spoon Dessert Spoon – Slightly smaller than a tablespoon, this spoon is used for eating desserts such as ice cream, custard, and fruit salad. Its size and shape make it easy to handle sweet dishes. Serving Spoon – A large spoon used to transfer food from serving bowls or platters onto plates. It is usually used for rice, vegetables, or pasta dishes.

Salad Fork & Dinner Fork Salad Fork – A smaller fork used to eat salads, fruits, and appetizers. Its shorter tines make it easier to pierce soft foods like lettuce or sliced vegetables. Dinner Fork – The largest fork on the table, used for main course dishes such as meat and pasta. It is placed to the left of the dinner plate.

Steak Knife & Butter Knife Steak Knife – A sharp knife with a pointed tip used to cut steaks and thick meat. Its serrated edge allows easy slicing without tearing the meat. Butter Knife – A small, rounded knife used to spread butter, jam, or other soft spreads onto bread. It is placed on the bread-and-butter plate.

Care for Flatware Wash immediately after use to prevent staining. Dry thoroughly before storing to avoid rust. Polish occasionally to maintain shine. Arrange neatly in a cutlery tray or container.

DINNERWARE What is Dinnerware? Dinnerware includes plates, bowls, and dishes used for serving and eating food. It can be made from ceramic, porcelain, glass, or melamine. Each type of plate or bowl is designed for a specific part of the meal.

Dinner Plate & Salad Plate Dinner Plate – The largest plate used to serve the main course of a meal. It is usually placed at the center of the table setting and serves as the base for the meal. Salad Plate – A smaller plate used for salads, appetizers, or light portions. It is often served before the main dish.

Soup Bowl & Dessert Plate Soup Bowl – Deep and wide to hold liquid-based dishes like soups, stews, or porridge. It is often placed on top of a saucer or plate to prevent spills. Dessert Plate – A small, flat plate used for serving sweet dishes such as cakes, pastries, or fruits. It is usually brought out after the main meal.

GLASSWARE What is Glassware? Glassware refers to all types of glasses used for beverages. The shape of each glass helps enhance the flavor, aroma, and presentation of the drink it holds.

Beverage Glass & Wine Glass Beverage Glass – A tall glass used for water, juice, or soda. It is often the most commonly used glass on the table, placed directly above the knife. Wine Glass – A stemmed glass used for serving red or white wine. Holding it by the stem prevents body heat from warming the wine, preserving its taste.

Beer Mug & Tumbler Beer Mug – A heavy, thick glass with a sturdy handle. It keeps beer cold and is designed to hold a large quantity of liquid. Tumbler – A straight-sided glass without a stem, used for soft drinks or mixed beverages. It is practical and durable for both formal and casual settings.

HALLOWARE What is Halloware ? Halloware includes all hollow containers used to hold and serve food or beverages. These items are often made of metal, ceramic, or glass and are essential in food service and hospitality.

Coffee Pot & Tea Pot Coffee Pot – A container with a spout and lid used for brewing and serving hot coffee. It is often made of stainless steel or porcelain to maintain the beverage’s temperature. Tea Pot – A rounded pot used for steeping tea leaves and serving hot tea. Its handle and lid make pouring easy and elegant.

Creamer & Sugar Bowl Creamer – A small pitcher designed for serving milk or cream alongside coffee or tea. It allows easy pouring without spills. Sugar Bowl – A small covered bowl used to store sugar cubes or granulated sugar for hot drinks. It is often paired with a small spoon for serving.

TABLE SETTINGS Informal Table Setting Used for everyday or casual meals. It includes basic utensils such as a dinner plate, fork, knife, spoon, glass, and napkin. The goal is comfort, convenience, and a tidy presentation suitable for family dining.
