Retinol is consumed in the diet in two forms : 1. ß-carotene 2. Retinylesters Dietary Retinyl esters are hydrolysed by pancreatic or intestinal brush border hydrolases in the intestine, releasing retinol and free fatty acids. Carotenes are hydrolysed by ß-carotene 15-15’-dioxygenase of intestinal cells to release 2 moles of retinal which is reduced to retinol. In the intestinal mucosal cells, retinol is reesterified to long chain fatty acids, incorporated to chylomicrons and transferred to the lymph. Vitamin A is absorbed in the intestine along with fats with the help of bile salts and chylomicrons. Fat content of foods stimulate vitamin A absorption. DIGESTION & ABSORPTION OF VITAMIN A
