Our sake has been brewed for over 280 years in Shirataka, a small town with a population of 12,000, in Yamaga-
ta Prefecture. Shichijuro Suzuki, the 15th head of the Suzuki family, is the Toji (Master brewer) and brews
and bottles sake using traditional techniques that have been passed down from generation to generation.
We use rice called “Sawanohana” grown within a 2 km radius of our brewery. This rice was grown in Shirataka, absorbing
the same water that is used for sake brewing, showing that Shirataka's rice makes for "delicious food and delicious sake".
What we value is teamwork. There is a saying in Japanese:“Harmony in Brewing, Quality in Sake”. We believe that a good
team creates good sake. Not to mention calling out for each other, we share even the smallest details of our work since we
are involved in dangerous tasks due to the nature of our work. Our focus is on "Kijoshu" ("noble brew sake"), a type of sake
made with finished sake instead of water, and our aim is to brew sake that is as precious as its name suggests.

In order to achieve a high cost-effectiveness rate, we do not limit
ourselves to one rice variety when producing this sake. However, the
brewing process remains exactly the same, and the sake is handcrafted
and shipped with the utmost care. Despite its low price, it has a balanced
flavor that one never tires of. This sake is a versatile type that pairs well
with a wide range of dishes.
This Junmai Ginjō Sake is made from a rice variety called "Dewa-no-
Sato", cultivated by Kotaro Endo in Nagai City, a neighbor of Shirata-
ka Town. Dewa-no-Sato is Yamagata Prefecture's original sake rice,
developed by the Yamagata Prefectural Industrial Technology Center.
The rice is polished to a 55% ratio and milled using a special process
called flat shape rice-polishing. Unlike normal milling, in this way
unpleasant flavors can be efficiently removed, resulting in a clearer,
smoother taste. Drinkers can smell the fruity aroma of pears in this sake.
This Junmai Daiginjō is made from “Sawa-no-Hana”, a rice grown
in Shirataka Town, and was brewed using a classic method called
"Kimoto-zukuri" that introduces natural lactic acid bacteria during the
brewing process. Sawanohana is grown in rice fields within a 2km radius
of our brewery, using the same water that is used in the brewing process.
We aim to create sake that is “delicious to eat as rice and delicious to
drink as sake". Because we brew our sake using the traditional “Kimoto”
method, which has been handed down since the Edo period, it is charac-
terized by a full-bodied, sturdy structure.

Nakaoki Sake Brewery was established in 1923 in Kawanishi Town in the Okitama Region, nurtured by the water of the
Mogami River, with Mt. Azuma to the east, the Asahi mountain range to the west, and the Iide mountain range to the south.
We named one of our sakes “Uyō Ikkon”, with the hope that people will raise their glasses together and enjoy drinking our
sake in a harmonious way.
Yoshiro Takahashi, the brewery's president at the time of its founding, upheld three important rules he received from his
sake brewing mentor, and to this day our brewery strives, just as he did, to produce sake beloved by the local people.
"A nutritious sake that will turn one cup into two or three.”
Nakaoki Brewery's goal is to brew a sake that soothes our customers' hearts. Our sake may not have a strong, overpower-
ing aroma, but it has a rich flavor that pairs well with food, and you will find yourself pouring another cup as your mind and
body are soothed before you know it.

This sake is carefully brewed at low temperature fermentation using
100% “Yukimegami”, a new rice variety developed specifically for sake
brewing by Yamagata Prefecture. It has a gorgeous aroma and a slightly
sweet, refreshing taste.
This is a new kind of sake from Nakaoki Sake Brewery.
It is a sweet sake brewed with our unique method. We have developed a
flavor that can drink as a sake highball and that even those who are not
big fans of sake can enjoy. It tastes great on its own, but we recommend
drinking it with soda water.
This is a new kind of sake from Nakaoki Sake Brewery.
The amount of koji used in the sake is higher than usual, resulting in a
stronger taste. It is a bit high in alcohol content, but has a slightly sweet,
yet sour and refreshing taste. We recommend drinking it on the rocks.

vantage of Yonezawa's winter environment.
We are rooted in the local community and fully devoted to brewing "Kōbai" with all our heart, under the slogan: "We compete

We won a gold medal at the latest Annual Japan Sake Awards 2025, generating a lot of buzz.
Our brewery is committed to traditional cold sake brewing, taking advantage of our location in Yonezawa's snowy coun-

Founded in 1597, we are one of the oldest sake breweries in Japan. Our brewery is located in Yonezawa, an area with
heavy snowfall, and we exclusively produce Junmaishu (pure rice sake) using soft water from melted snow. Our sake is

This Junmai sake is characterised by its mild rice flavor and a mellow,
mature mouthfeel.
It has a gentle aroma reminiscent of bananas and chestnuts and pairs
well with all kinds of cuisine, including Japanese, Western, and Chinese
foods. This sake can be enjoyed cold or warm.
Toko Junmai Ginjō Genshu is Toko's flagship product and combines
three qualities: a fruity Ginjō aroma, a smooth flavor and a clean finish.
Its gorgeous, fruity aroma is reminiscent of ripe apples and pears,
and drinkers will also enjoy the rich, crisp flavor of 16% undiluted sake.
This sake won the Grand Gold Medal at the Delicious Sake in a Wine
Glass Award 2025.
We use "Yukimegami”, rice produced for sake brewing in Yamagata
Prefecture. We polish the rice to 18%, only using the droplets that fall
due to gravity. This extremely delicate Junmai Daiginjō is brewed using
only the center part of the rice.
Please enjoy the clear taste reminiscent of melted snow, the delicate
flavor, and the silky texture. This sake won the highest honor, the gold
trophy, at the International Wine Challenge 2024 in the Junmai Daiginjō
category.

Sagae City in Yamagata Prefecture is a region with four distinct seasons where rice and fruit grow in abundance. Our
company, established in 1836, is located in a valley rich in soft underground water from Mt. Gassan, and produces sake
with a soft and bright taste.
Before we entered the brewing business, we were active in the safflower and rice business. Therefore, we named one of our
sakes "Benibanaya Jubei”, after this first generation of our company. (Benibana=safflower)
We currently produce and sell sake, authentic shochu, and plum wine.      
Our basic policy is “quality-oriented"】
(1) Brewing sake in Yamagata, blessed with good water and earnest people
(2) Making the best sake from Yamagata's finest sake rice.
(3) Understanding the importance of the quality and polishing of the rice, and carefully polishing rice in-house.

Benibanaya Jubei is a Daiginjō made from Yamadanishiki rice polished
to 35%. The flavor is gorgeous and fruity, reminiscent of muscat. It has a
good balance of acidity and sweetness, leaving a sweet aftertaste on the
tongue. A more complex aromatic texture can be enjoyed by drinking it in
a wine glass.

Biden Bishu is made 100% from "Dewa-Sansan", which is Yamagata's
prefectural rice. It is an "all-Yamagata" Junmai Daiginjō, made with
water, rice, and rice koji all produced in Yamagata Prefecture.
It has a good balance of acidity and sweetness and goes well with meals.
The scent is fruity and the taste is not too sweet. Thanks to its acidity,
you will not get tired of its taste. This sake serves as a link between two
dishes.

This shochu is made by brewing sake once and distilling it. It has a clean
flavor, smooth taste, and the aroma is reminiscent of sake. It can be
enjoyed on its own like a super dry sake.
Drinkers also can enjoy it on the rocks, with water or soda, or even as a
base for cocktails.

Founded in 1922, our brewery focuses on handcrafted sake brewed by a local master brewer (toji) and local brewers
(kurabito). We believe it is essential to use only local ingredients to brew sake, just as it is with wine, and since 2001 we
exclusively use rice grown in Yamagata.
We are involved in every step of the process, from rice planting to harvesting, in cooperation with the Oe Sake Rice
Research Association and the Toyokuni Cultivators Association.

We use only local rice and understand the origin of the rice used to brew our sake. From milling all rice in-house to using
machine analysis to conduct daily fermentation checks, we carefully monitor production and ensure optimal control at

We use "Yukimegami," a new rice variety suitable for sake brewing which
is carefully cultivated by local sake rice farmers with deep ties to our
company.
This premium sake is carefully prepared in the bitterly cold month of
January and pressed at the perfect time. Once the pressing process
is done, the sake is carefully bottled and stored at a low temperature,
ensuring a mellow Ginjō aroma and an elegant and clear taste.
We use Toyokuni, a type of rice grown under contract in Sagae City used
exclusively by our company. The rice has a low protein content, making
for sake with a delicate aroma and a clean, dignified flavor.
The Ginjō aroma is not too strong, and it has a light, mildly acidic taste
and a crisp aftertaste. Enjoy it crisply chilled in a cold sake glass.
We use Miyamanishiki, a rice grown with reduced pesticides under
contract with the local Oe Sake Rice Research Association.
The brewing process is executed with extensive care, on par with that
of sake entered in tasting competitions. Koji making is done using the
Futa-koji method, which determines the flavor of the malted rice, and
requires a lot of attention. This Junmai Daiginjō is brewed slowly at a low
temperature during the great cold of January. After pressing, the sake is
stored and aged under refrigerated conditions.
It has the characteristic sharp, clear, mellow, aromatic flavor of
Miyamanishiki rice, and the scent and taste melding seamlessly.

Dewazakura Shuzō was established in 1892. Since its founding, we have continued to brew our sake with an emphasis on
making by hand and not relying on machines. At Dewazakura, we rely on the five senses for meticulous management to
ensure high quality sake brewing. We strive to continue producing sake that is recognized and beloved not only in Japan,
but around the world. We were one of the first sake breweries in Japan to start exporting sake internationally, and we will
continue our efforts so that our sake can be tasted in even more parts of the world.
Dewazakura is a sake brewery that focuses on traditional handcrafted sake. We strive to create sake that conveys the
craftsmanship and warmth of our hands to the customers. Regardless of grade, we take the same level of care for every

Dewazakura's sake made with Yukimegami rice has a delicate, elegant
flavor and smooth mouthfeel. It has a balanced taste and rich flavor, with
a lingering aftertaste that lasts long after one has finished drinking. Its
beautiful taste is highly appreciated by sake lovers.
Dewazakura's Dewa-Sansan is carefully brewed with "Dewa-Sansan",
a sake rice developed by Yamagata Prefecture. It is characterized by
its rich flavor and aroma, as well as pleasant tartness, and has a mild yet
crisp taste.
It pairs excellently with Japanese dishes such as sashimi, shellfish and
tempura etc.
Dewazakura Saku is a low-alcohol sparkling sake made entirely with
Yamagata's locally produced "Dewa-no-Sato" rice. It has an alcohol
content of 9% and is characterized by its fruity scent and refreshing
taste.
It is made using a full-bodied junmai sake as a base and tastes even
better when served chilled. The allure of this sake is its refreshing
carbonation, which is great for sake beginners to enjoy.
