Computer Application in Food Industry 2
3
ABSTRACT In this paper, Briefly describe a number of food engineering tasks for which computers and food engineering principles which can provide powerful aids are outlined, and the fundamental and practical problems associated with these tasks are identified. Examples of our experience with theoretical and applied developments for specific food engineering software are provided. 4
HISTORY OF COMPUTER SCIENCE The first computer to be termed a ‘‘supercomputer’’ was the CDC 6600, introduced in 1966. The evolution of digital computing is often divided into generations. Each generation is characterized by dramatic improvements over the previous generation in the technology used to build computers, the internal organization of computer systems and programming languages. Recently the term ‘‘supercomputer’’ has been displaced by the term ‘‘high performance computer’’ or ‘‘high performance computing environment’’. 5
SOFTWARE FOR FOOD INDUSTRY Balance by Campden and Chorleywood Food Research Association: Model the functional properties, shelf life, physical appearance and nutritional properties of a cake which they design on-screen. SolidWorks by SolidWorks Corporation: Used to knead dough and bake bread in small bakery kitchens and large plants. The CALSoftTM by TechniCAL : Use for conducting heat penetration and temperature distribution testing, evaluating the collected data and calculating a thermal process or vent schedule/come-up time. 6
SOFTWARE FOR FOOD INDUSTRY FIDAP by Fluent Inc. : Modeling tool of choice for applications such as polymer processing, thin film coating, biomedical, semiconductor crystal growth, metallurgy, glass processing and related fields. Icepak and IcePro by Icepak : Fully interactive, object-based thermal management software for optimizing your design at every phase of the development cycle: systems, components, heat sinks and packages. CFD-ACE+ by CFDRC : It enables coupled simulations of fluid, thermal, chemical, biological, electrical and mechanical phenomena. 7
SOFTWARE FOR FOOD INDUSTRY Autonest by Thapar: Automatic nesting of irregular shapes on a rectangular plate helps in optimum utilisation of sheet materials in a variety of industries using sheet metal, textile, glass and leather. Ansoft DesignerTM by Ansoft Corp : Takes microwave, RF, high-speed and communication design software to a new level. Simulink by Mathworks : Interactive tool for modeling, simulating and analyzing dynamic, multidomain systems. It integrates seamlessly with MATLAB, provides immediate access to an extensive range of analysis and design tools. These benefits make Simulink the tool of choice for control system design, DSP design, communications system design and other simulation applications. 8
SOFTWARE FOR FOOD INDUSTRY FOODS-LIB by USDA : Enables flow sheeting and design of food processes, simple microbial and quality assessment and economic analysis. LIMS by StarLims : LIMS’ primary goal has been to deliver leading edge, flexible and easy-to-use, collaborative LIMS solutions to organization worldwide, comprising corporate, government, municipal and private laboratories, within the chemical, clinical, environmental, food, forensics, petrochemical and pharmaceutical industries. Food Processor by ESHA Research: The Food Processor is internationally recognized as the most accurate, most complete and easiest-to-use nutrition analysis system. 9
SOFTWARE FOR FOOD INDUSTRY Genesis by ESHA Research: Genesis R&D has pushed product development to new levels of ease and accuracy. It enables to customize your work and save countless hours of re-entry and hand calculations. Flavor Selector 5.0 by FKS: Flavor information management database designed to develop or maintain a flavor library. It contains all information that characterizes flavors including sensory profile. Supply chain execution (SCE) by HighJump Software: Ideal for manufacturers, distributors, retailers and third-party logistics companies, HighJump’s SCE solutions offer a value proposition unmatched by the competition: the combination of robust functionality and industry-leading adaptability that results in fast, easy and costeffective adaptation to change. 10
SOFTWARE FOR FOOD INDUSTRY MES by Production ware: It optimizes the management and execution of the plant floor production processes and can be tailored to meet the plant or company requirements. Pathogen Modeling Program by USDA/ARS: This predictive microbiology application was designed as a research and instructional tool for estimating the effects of multiple variables on the growth, inactivation or survival of foodborne pathogens. 11
IMPORTANCE OF CAE Accelerates design and prototyping processes, reducing time-to-market for new food products. Minimizes resource expenditures by simulating and optimizing production processes, leading to reduced waste and improved efficiency. Enhances product quality through virtual testing, ensuring safety and compliance with industry standards. Enables precise formulation of food products, considering nutritional content and regulatory requirements. 12
IMPORTANCE OF CAE Facilitates better management of logistics and inventory, improving overall supply chain efficiency. Allows for the rapid development and customization of new recipes and formulations, fostering innovation in the food industry. Optimizes manufacturing processes for increased productivity and energy efficiency. Identifies and mitigates potential issues in the production process, reducing the risk of product recalls or quality failures. 13
CONCLUSION Rapid advances in food processing technology and the omni-present push for new products tend to tighten developmental timetables. For this reason, automated drafting systems are making a big impact in the processing and packaging areas of the food industry. In fact, companies that have converted to CAD have found that it yields tremendous savings in time and money while improving the quality of facility and machine design. 14
