Chitin and Cellulose Chitin and cellulose are natural polysaccharides. Cellulose is a polymer of β -D-glucose unit linked with β -(1-4) glycoside linkage. Chitin is a polymer of N-acetyl β -D- glucosamine unit linked with β -(1-4) glycoside linkage. N-acetyl β -D- glucosamine is β -D-glucose with OH group at C no 2 replaced with acetamido group. Chitin can be isolated from shell of crabs, crustaceas .
