What is Borsch?
Borschtisaliquiddishmadefromavarietyof
vegetablesandhasmanycookingoptionscombined
withsourtaste.Thisisthemain,firstdishofUkrainian
cuisine,whichispreparedinallofitsregionsand
whichhasgainedinternationalrecognition.Borschtis
oneofthecentraldishesnotonlyinUkrainiancuisine,
butalsoinUkrainianculture,whichiswhyitisalso
oneofthemostresearcheddishes.Researchersconduct
expeditions,writescientificarticlesandshootfilms
aboutborscht.Attentiontothisdishdoesnotfade.

There is a huge variety of borscht recipes in different regions of
Ukraine. Differences in recipes were due, in particular, to differences
in climate and availability of products.
For example, in areas close to rivers, lakes or the seacoast, fish
represented one of the key components of borscht. Usually, fish was
dried in straw or salted.
In the West, porcini mushrooms were a preferred ingredient.
Huge Variety:

300-400gbeef
1.5kgcabbage
3-4 potatoes
1-2 carrots
1 onion
1 beetroot
2 bay leaves
1.5-2 l water
100 ml sour cream
salt and pepper to taste
Ingredientsfor a traditional borscht

Directions:
1.First,preparethe broth.Wash the meat,put it in a potand pour in
coldwater. When the beef boils, remove the foam and cook the broth for
another 20 minutes.
2.Peelbeetroot, grateon alarge grater and fry in oil.Add a little meat
brothand stew on a low heat.
3.Finelychoponionsand fry in oil untilgoldencolor. Add the carrots,pour
some more broth and stew for another 3-5 minutes.
4.Peelthe potatoes, cutintocubes,add to the brothand wait untilitboils.
5.Put theshredded cabbageintothe brothand cookfor 15
minutesmore.Add salt, pepper, stewed beets, herbs and bay leaf.6.Cover
thepan with alid andcookforanother 3-5minutes.Remove from theheat
and let it steep

The conflict around borscht
TherewasalongdebateabouttheUkrainiannatureof
borscht.Ofcourse,theinitiatorwastheaggressor
countryrussia,whichdoesnotrecognizetheUkrainian
nation,language,orculture.
DuringthetimesoftheUSSR,thisempireand
everythingbelongingtoitwereoftenperceivedand
referredas“russian"intheworld:forexample,dishes,
songs,films,etc.Becauseofthis,borschtwasnot
alwaysdistinguishedasadishoftheUkrainianpeople.

The conflict around borscht
On December 21, 2020, the restaurant guide "Michelin"
announced the start of the evaluation of moscowrestaurants
that offer "an emblematic dish for russia" -borscht. Later, the
management of the restaurant guide apologized for the
"gastronomic imprudence" in the wording regarding borscht. In
July 2020, Ukrainian diplomats got Michelin to designate
borscht as a Ukrainian dish. At the same time, the Embassy of
Ukraine in France announced the start of work on the Michelin
Guide to Kyiv restaurants.
In March 2021, the Ministry of Culture and Social Policy
called to join the support of the national dish on social
networks. To do this, users of social networks posted recipes,
photos or stories with borscht, which they prepared themselves
at home or tasted elsewhere, with the hashtag #борщнаш
#uaBorshcht
.

Borscht is not only delicious, but also has many health
benefits. It is rich in vitamins and minerals such as vitamin
C, potassium, and iron, making it a great choice for those
looking to boost their immune system and overall health.
Thus, Ukrainians managed to preserve and nurture their
cultural heritage: literature, language, art and cooking.
Therefore, it is extremely important to repel attacks on all
fronts: military, humanitarian and cultural.
