BOTTLE GOURD PROCESSING FOR VALUE ADDED PRODUCTS
INTRODUCTION
Bottle Gourd (Lagenaria siceraria (Mol) Standl), reservoir of vital nutrients, is
one of the popular vegetable crops in India. It is grown throughout India
and is available around the year. It is annual and vigorous climbing vine
with large leaves. Bottle gourd fruits are fleshy and vary in shape and
size. It belongs to the family of cucurbitaceae, genus Lagenaria. The
fruit in green stage and leaves with stem are used as vegetable.
The hard shell of the fruit is used for various other purposes . In
India, its production is around 2458 thousand tonnes from 103230
hectares (NHB 2015 – 16 ) with average yield ranging from 9 – 12
tonnes / ha. Usually it comes to harvesting in 90 days. It is known as
Dudhya Sweet- Marathi, Lauki- Hindi or calabash. It grows well in hot
moist season. It is propagated by seed (3 – 6 kg / ha ) in basins of 1 –
1.5 m diameter made 2 – 3 m apart or in furrows . Three to four seeds
are sown in a basin at 2.5 - 3 cm depth . Seedlings can also be grown in
poly or net house for planting. The principal verities are : summer
prolific Round, summer prolific Long, Pusa Naveen, Arka Bahar,
Pusa Manjiri, Pusa Meghdoot , etc. Bottle gourd is highly
perishable goes 20 – 45 % waste from harvesting till reaches to
consumer. Therefore, processing and value addition is necessary
for minimising losses and income generation
Bottle Gourd is a low calorie diet and used in numerous Indian preparations
and delicious dishes. With a short cooking time, it is often found in soups,
stir fried, dal or simply served as a sabzi. It's grated form is used to make
tuiti – fruity, sweet pickle, hot pickle , halwa and kofta curries. Long thin
strips of bottle gourd are used as a vegetarian substitute in sushi or can
simply be drunk as a juice. It's seeds are candied or roasted for
consumption .
Nutritional Value

Bottle Gourd is a low calorie diet full of numerous nutrients stored in it.
Gourd is used to counter stomach acidity, ulcers, indigestion, fatigue,
excessive thirst. The juice of bottle gourd is very good for the health with a
lot of medicinal properties. 100 g of bottle gourd edible portion contains
15 calories, 1 g fat. Its water content is 96%. It is low in saturated fat,
cholesterol, high in dietary fibre, Vitamin C, Vitamin K, riboflavin –
Vitamin A, Vitamin B, Vitamin E, essential minerals - zinc, thiamine,
iron, folate, magnesium, sodium , potassium, calcium , and

manganese, choline (for retaining and enhancing memory), rich in both
soluble and insoluble fibers.
Matured fruit were washed, cut into small cubes, seeds and pith of the fruit were separated
manually. Juice from the peeled fruit was extracted in the electrical grinder and strained through
muslin cloth. Extracted juice was stored in refrigerator.
The seeds are rich in protein ( 24 – 38 % ), lipid (35 – 46 %), moisture 2.47 %, oil 35 -7 %,
carbohydrates 12.5 %, crude fibre 4.29 %,


HEALTH BENEFITS
Medicinal properties of the bottle gourds are highly potent in curing
various diseases. Bottle gourd is good source of iron, Vitamin C, B
complex and ascorbic acid for tropical and sub tropical regions. There
are many health benefits of bottle gourd. It helps in better digestion,
body weight management, strengthening heart muscles . It reduces
constipation, blood sugar level, inflammation in kidney and liver, urinary
infection. It cures insomnia, , calculi, mental disorder, severe diarrheal,
cough, asthma, bronchitis, sleeping disorder, etc. Bottle Gourd

Harvesting: Harvesting starts after 50 – 55 days when the fruit is in
tender stage. Plucking the individual fruit with sharp knife keeping 5 cm

Grading: It is done as per size, colour and tenderness.
Storage : - Can be stored for 2-3 days without damage under shade by
sprinkling fresh water. Can be stored in cold store for 20 – 25 days at 50
to 80 deg F temp.

Bottle Gourd Pulp Canning :- The bottle gourd pulp could be successfully stored up to 90
days of storage period without preservative & with preservative (0.05 % and 0.10 % sodium
benzoate - Sejani et al. ISSN: 2320 – 7051).

Process: Grading, washing, peeling, cutting into pieces, blanching at 90 deg C for 2 minutes, crushing
/ pulping, adding sodium benzoate 0.05 to 0.1 0 %, filling, exhausting at 82 deg C for 5 minutes and
sealing.

Yield of Bottle gourd:- The average yield of 100 to 120 quintal / ha can be expected. Marketing of Bottle gourd:- Can be transported
via truck to local vegetable market.
Yield about 71 to 79 tons per acre.

PKM 1:

It is a induced mutant from H375 with in yield potential of 25t/ha in 135-140 days. The fruits are extra long (180-
200cm)
Bottle gourd is also known as “Calabash” or “lauki” and it belongs to family “Cucurbitaceae”. It is an
annual climbing vine which has vigorous growth. The plant bears white color flowers which bears fleshy
and bottle shaped fruits. The fruit is used for cooking purpose. There are also health benefits of bottle

Depending upon variety and season, crop is ready for harvesting in 60-70days. Depending upon market

purpose. Cut the fruits from vines with help of sharp knife. In peak season, picking should be done in
every 3-4 days.

Keep isolation distance of 800m from other varieties of sponge gourd. Remove diseased plants from the field. For
seed production, the fruits are harvested when they get physiologically mature. Three field inspections are
required for the production of true to type seed. After harvesting, fruits are dried and then seeds are extracted.

blood and reduces the impact of low blood pressure and heart diseases , antioxidant, anti-stress,
adaptogenic, analgesic, antiinflammatory, cardio-protective, cardio-tonic, antihyperlipidemic,
diuretic, aphrodisiac, alternative purgative, antidote to certain poisons and cooling properties
(Ahmad et al., 2011; Deshpande et al., 2008 and Mohale et al., 2008). It
powder:- For convenience in adoption of bottle gourd, it needs to be converted into dried
powder form so as to make it available as and when required. Preparation of bottle gourd powder
will also help to establish small scale industries in urban areas due to high scale demand. Preparation

of bottle gourd powder is one of the viable technologies for utilization of bottle gourd fruits.
However, standard process for preparation of bottle gourd powder is not available having optimum
quality attributes. It is, therefore, necessary to optimize the process parameter like blanching time
and drying temperature in the preparation of bottle gourd powder. In view of these facts, bottle
gourd powder was prepared by varying process parameter and evaluated for its quality
characteristics to standardize the process parameters.
BOTTLE GOURD SHREDS: -
The fruits were thoroughly washed after sorting and grading. Fruits were cut into two halves along
its vertical axis and nonedible portion was scooped out with the help of spoon and cut into shreds.
Thickness of shreds was maintained as 3 mm with the help of stainless steel knife
STEAM BLANCHING SHREDS:-
Steam blanching of bottle gourd shreds : A deep pot with tight fitting lid and a wire basket was used
for steam blanching. The water was added to the pot and brought to a rolling boil. Bottle gourd
shreds were kept at 2 inches deep loosely in the basket. Basket with shreds was placed in the pot
making sure that water does not come in contact with the bottle gourd shreds. Pot was covered for
varying blanching time as 2, 4, 6 and 8 min, respectively. Steam blanching pre treatment (6 min)
prior to hot air drying (600C) was found to be the most effective treatment to obtain better quality
bottle gourd powder. The bottle gourd powder prepared by the developed process technology was
highly consumer acceptable.

Sodium benzoate @ 0.05 to 0.1 % is added. Containers are filled and
exhausted at 82 deg C for 5 minutes. It can be stored safely for 90 days.
