KINDS OF CRUST 2/1/20XX PRESENTATION TITLE 2

SINGLE CRUST Has only a bottom crust. Used for pies where the filling is not covered, like pumpkin pie, custard pie, or quiche. 2/1/20XX PRESENTATION TITLE 3

DOUBLE CRUST Has both a bottom and a top crust. The filling is enclosed between the two layers. Examples: apple pie, chicken pot pie. 2/1/20XX PRESENTATION TITLE 4

LATTICE CRUST A decorative top crust made by weaving strips of dough. Allows steam to escape while baking. Example: cherry pie, blueberry pie. 2/1/20XX PRESENTATION TITLE 5

GRAHAM CRACKER OR COOKIE CRUST Made by crushing cookies or crackers and mixing them with butter and sugar. Usually pressed into the pan instead of rolled out. Examples: cheesecake, icebox pies. 2/1/20XX PRESENTATION TITLE 6

Crushing graham crackers, cookies, or biscuits into fine crumbs. Mixing the crumbs with melted butter (and sometimes sugar). CRUMB CRUST Similar to graham crust but can use any type of crumbs (biscuits, wafers, even pretzels). Often used for chilled or no-bake pies. 2/1/20XX PRESENTATION TITLE 9

How It’s Made: Crush biscuits, cookies, pretzels, or even cereals into fine crumbs. Mix with melted butter (and sometimes sugar). Press firmly into the bottom (and sides) of the pan. Chill or bake lightly to set before adding the filling. 2/1/20XX PRESENTATION TITLE 10

Examples of Crumb Crusts: Oreo Crust – made with crushed Oreo cookies (great for chocolate cheesecake). Digestive Biscuit Crust – often used in no-bake cheesecakes. Vanilla Wafer Crust – pairs well with banana cream pie. Pretzel Crust – gives a sweet-salty twist for cream pies.Gingersnap Crust – used for pumpkin or spiced pies. 2/1/20XX PRESENTATION TITLE 11

BLIND-BAKED CRUST A crust baked without filling, often with weights to keep it flat. Used for tarts, custard pies, or cream pies. 2/1/20XX PRESENTATION TITLE 12

HOW IT’S DONE: Line the pie pan with rolled-out pastry dough. Prick the bottom with a fork (to prevent bubbles). Line with parchment paper and fill with pie weights (or beans/rice) to keep the dough from puffing up.
