Foodborne diseases are caused by consuming contaminated food . These diseases result from the ingestion of pathogens such as bacteria, viruses, parasites, or toxins . The contamination of food may occur at any stage in the process from production to consumption. What is food borne diseases

Botulism

Botulism Botulism is a disease caused by the ingestion of food containing the neurotoxin produced by clostridium botulinum. It is an uncommon, but potentially very serious illness. It is a type of food poisoning that produces paralysis of muscles via a nerve toxin called botulinum toxin

Types of botulism Foodborne botulism Wound botulism Infant botulism Results from ingestion of contaminated food (usually honey) with spores of C.botulinum in children ≤1 year of age. Manifestations include inability to suck milk and swallow, weakness, floppy neck (floppy baby syndrome).

Involuntary muscles become paralyzed. Paralysis spread to the respiratory system and heart and usually result death. The symptoms of botulism usually appear within 12 to 36 hr.

Staphylococcus Food Intoxication

One of the most commonly occurring food poisonings is caused by the ingestion of the enterotoxin formed in contaminated food produced by Staphylococcus aureus. Enterotoxin causes gastro- enteritis or inflammation of the lining of the intestinal tract. It also causes wide variety of suppurative (pus) diseases causes by Staphylococcus aureus. Symptoms Diarrhea or constipation Abdominal pain Headache High fever Symptoms appear in 12-48 hr after ingestion of contaminated food. Disease last for 4-7 days Typhoid fever can become life threatening if not treated properly.

Enteropathogenic Escherichia Coli

Escherichia coli (E. coli) are bacteria that are found in the the intestines of animals and humans . Most types of E. coli are harmless and are an important part of the digestive tract, but some can make you sick. Enteropathogenic E. coli (EPEC) is a type of E. coli bacteria that can make you sick with diarrhea . Enteropathogenic Escherichia Coli

Symptoms can be seen as soon as four hours after being infected with EPEC, or can take up to 12 hours Last for 5-7 days
