WHAT IS Food spoilage Food spoilage refers to the process by which food deteriorates to the point where it is not edible to humans or its quality becomes unacceptable This process can affect the food's taste, smell, texture, and appearance. These microbes break down food components (like proteins, fats, and carbohydrates), producing off-flavors, odors, gases, and toxins. Enzymes naturally present in food can cause chemical changes. Oxidation of fats leads to rancidity Light, heat, moisture, and air can accelerate spoilage.
