Objectives: Identify the classifications of seafood Know the nutritive value of seafood Identify the different market forms of fish 2

SEAFOOD – is known as one of the most expensive foods in the worlds. - It refers to the marine animals. Includes: Fish, shellfish, and seaweeds 3

CLASSIFICATION OF SEAFOOD Fish Shellfish 4

Fish Is generally covered with scales. It also has backbone It can dwell both in freshwater and brackish water. Includes: Salmon, tilapia, milkfish ,and blue mandarin 5

Shellfish Is covered with shells, either partially or fully. It is mostly cultured already but dwells in saltwater. 6

Types of Shellfish Crustaceans – are fully covered with shells They have a hard crust and segmented body. Examples: Crabs, lobster, and shrimps. 7

Mollusks – have a soft body and are partially covered with shells. Examples: Mussels, Clams and Oyster 8

Nutritive Value Seafood is a good alternative to meat. It contains low calories that make it a good choice for health-conscious people. 9

Nutritive Value Seafood is a rich source of protein It contains low calories and saturated fat while high in vitamins and minerals 2. Fats derived from fish and shellfish are polyunsaturated fats including omega-3 , fatty acid, which is good in preventing heart diseases. 10

Nutritive Value 3. Fish and shellfish are natural sources of vitamins Vitamins B- complex –is essential in the normal functioning of the nerves Vitamins A – helps in developing normal vision Vitamins D – develops strong bones. 11

4. Seafood is also rich sources of Selenium, iron, zinc, calcium and iodine. Selenium - is a strong antioxidant that protects the human body against cell damage Iron - responsible for the production of red blood cell Zinc – is essential for cell growth and immune system development. 12

Iodine – is responsible for the normal functioning of the thyroid gland Calcium – is important in the development of strong bones 13

Market Forms of Fish Live Fish Whole fish Dressed Fish Fillet Steak Cured Fish 14

Live Fish Can be marketed alive. They should be free from bruises and should have clear slime. Examples: Tilapia, catfish, crabs, lobster 15

Whole Fish Cannot be marketed alive, Examples : Milkfish, tuna, salmon 16

Dressed Fish Is marketed without the head ,fins, scales, and internal organs. 17

Fillet Is a boneless side of the fish. Is done by cutting the fish lengthwise away from the backbone. Classifications of Fillet Single fillet – refers to one side of the fish Butterfly fillet - refers to the two sides of the fish, which are connected together with the uncut belly of the fish 18

Steak Refers to the cross-section slices of fish, which is cut from large dressed fish. It is usually used for frying, grilling, and baking 19

Cured fish Has undergone preservation processes. It may be smoked, dried, salted or pickled. Examples: smoked fish, dried squid, dried milkfish 20

Step in Cleaning Fish 1. Remove the scales of the fish by moving the knife back and forth. Start from one side of the fish then to the other side. 2. Trim the fins and tail of the fish 21

3. Open the head of the fish. Then, insert your fingers to remove carefully the grills. 4. Make a cut in the belly portion of the fish. Insert your fingers to gently remove the internal organs. Rinse properly 22

Principles of Cooking and Storing Fish 1. Fish requires less cooking time 2. Low to moderate temperature 3. Dress the fish 4. Fish and mollusks (clams, oyster, and mussels) should be served and consumed immediately. 23

5. The flesh of the fish is already cooked when it turns opaque and when the eyeballs of the fish pop out. 6. fat fish is best cooked using dry heat methods like broiling and baking 7. Fish is usually accompanied with a sauce and some garnishes 24

8. The meat of the fish and shellfish can be flaked easily when cooked. 9. Never store the shellfish in the refrigerator for more than 24 hours. 10. do not overcook the shellfish to prevent in from becoming rubbery. 25

Guidelines in Buying Fresh Fish and Shellfish 1. In buying whole fish , look at the eyes of the fish first . Check if it is bright and clear. The gills should be reddish, the skin should firm , and the slime should be clear. 26

2. Fish should not have a stinky or foul odor. 3. Shellfish should be firmly closed and odorless when purchased 4. Whole fish is fresh if it sinks in a basin water. 27
