Navratri is a widely celebrated nine days long festival and celebrated in the worship of Goddess Durga and its forms. On each day one of the 9 forms are worshipped and the festival ends with Kanya Pooja and Ashtami. If you are going to undergo fast for these nine days then you should remain empty stomach for all day and keep eating various calorie free and gluten free items like salads, fruits etc. Starvation may cause long term harm to your body and you may become obese after the end of the festival. RECIPES:-
Samvat pulao- a simple and easy pulao made with vrat
ke chawal/samvat or barnyard millet.
PREP TIME: 30 mins
COOK TIME: 15 mins
TOTAL TIME: 45 mins
SERVES: 2-3
INGREDIENTS(measuring cup used, 1 cup= 250 ml)
1 cup sama or vrat k chawal or barnyard millet
1 tsp cumin seeds
inch cinnamon stick
2 green cardamoms
2-3 cloves
3-4 whole black pepper
inch ginger + 1 green chilli ( crushed in a morter pestle)
8-10 curry leaves
1 tbsp chopped coriander leaves
2 tbsp peanuts
2 medium potatoes, peeled & cubed
8-10 whole cashews
8-10 almonds
2 tbsp oil or ghee
2.5 to 3 cups water
1 tbsp chopped coriander for garnish
Rock salt/sendha namak as required
Lemon juice as required
INSTRUCTIONS
Rinse the sama or barnyard millet a couple of times in
water like the way we rinse rice.
Soak in enough water for 20-30 mins .
Dry roast the peanuts on a pan or in the oven till they
become crunchy (optional)
Coarsely powder them in a mortar-pestile or in a dry
grinder.
Heat oil.
Add all the whole spices- cumin, cinnamon, cloves,
cardamom and black pepper.
Sauté till the oil become fragrant and the cumin crackels.
Add the crushed ginger-green chilli and saute for half a
minute on a low flame.
Add the cubed potatoes & curry leaves, chopped
coriander leaves and sauté for 3-4 on a low flame
Now add the peanuts powder and stir.
Drain the same rice and add to the sauted mixture.
Stir.
Add water & salt and pressure cook for 4-5 whistles till
the water is absorbed and the millet grains are cooked .
When the pulao is cooking, you can dry roast the
cashews and almonds when they are cooled, slice or
chop them.(nuts are optional)
When serving the samvat pulao, garnish with the dry
fruits and coriander leaves.

navratri fasting.(cheat day recipe)

INGREDIENTS (measuring cup used, 1 cup = 250 ml)
1 cup full fat fresh curd/ yogurt/ dahi at room temperature, 240 to 250 grams.
3 tbsp amaranth flour/ rajgira atta
1/2 tsp cumin seeds/jeera
1 to 1.5 tsp ginger-green chilli paste or 1/2 inch ginger + 1 to 2 green
chillies crushed in a mortar-pestle
1/2 cup water
1/4 to 1/2 tsp sugar or add as required
2 tbsp ghee or peanut oil
1 to 2 tbsp chopped coriander leaves for garnish
rock salt as required
INSTRUCTIONS
Take 1 cup fresh curd in a mixing bowl, whisk it till smooth.
Then add 3 tbsp rajgira atta or amaranth flour. If you don't have
amaranth flour. Then you can also add buckwheat flour ( singhara ka atta ).
Mix again very well, then add cup water.
Whisk the whole mixture very well, there should be no lumps.
In a pan heat 2 tbsp ghee or peanut oil. Add tsp cumin seeds and
sauté them till they are fragrant and change color.
Then add 1 to 1.5 tsp crushed ginger + green chilli paste.
stir very well and allow the kadhi to simmer,do stir on
occasions, the kadhi will thicken.
Garnish vrat ki kadhi with chopped coriander leaves and
serve vrat ki kadhi hot or warm with sama pulao, sama
khichdi, plain sama rice or rajgira paratha, kuttu ka
parathas or rajgira pooris.

PUMPKIN SOUP
Pumpkin or kaddu as it is known in hindi, is extremely
good for our health. It is loaded with fibre, low in
calories, and a rich source of vitamin A, C, E. it also
contains iron.
Ingredient
2 cups/500 g yellow pumpkin (kaddu), washed,
chopped with skin in to discs.
2 green chillies
1-inch piece ginger (adrak)
tsp roasted cumin (jeera) seeds
Salt to taste
10 curry leaves (kadhi patta), finely chopped
Add sendha namak and microwave for 7 minuts.Open and
add tomatoes on top(without chopping).Microwave again for 3 minutes.
Open again chop tomatoes & mix in the veg. Sprinkle pepper powder
to taste and serve

Method
Put the yellow pumpkin in a pressure cooker along with green chillies,
chillies, ginger, roasted cumin seed and 2 cups water
Pressure cook for about 10 minutes.
Take off the pressure and cook. Put into a blender.
After it is well-blended, put it back on heat and brink to boil
Seacon to taste.
Serve hot, garnished with curry leaves.
