Jelly is a semi solid food product prepared by boiling clean solution pectin containing fruit extract which is force from pulp with sugar and citric acid. A perfect jelly should be transparent, well-set and retain its shape when remain from mould. It should not be too stiff or too syrupy. For proper gel fermentation pectin sugar, acid and water are required. In highly concentration sugar solution, The sugar takes up water from pectin, molecules as a result some yields are products in pectin, molecule as result finally a stable gel in produced. INTRODUCTION
Ingredients Guava (2 pieces) Citric Acid (2%) Sugar 316g Juice after boil =650g Drinking water.
Procedure Weight the row material Weight the product Wash the product by drinking water Cut into equal size pieces Cook the cut pieces Juice is extracted Pour into stainless steel made cane. Sugar is added. Cook the material and sugar Add citric acid 1%
Discussion In this making of Guava Jelly find that the flavor jelly was sweet and sour and the color was greenish-yellow. The flowability was medium. Overall the flavor was satisfactory.
Precaution The Glassware Jar should be Sterilized. Exposure to skin should be adequate.
CONCLUSION In this making of Guava Jelly find that the flavor jelly was sweet and sour and the color was greenish-yellow. The flowability was medium. Overall the flavor was satisfactory.
