Local Products What learner should know 1. LONGGANISA Alaminos longganisa , also known as longganisa Pangasinan, is a Filipino pork sausage originating from Alaminos City, Pangasinan. It is a type of de recado longganisa . It is made with ground lean pork, ground pork fat, brown sugar, coarse salt, saltpeter, black pepper, vinegar, and garlic in hog casings. Longganisas from Alaminos, Pangasinan are unique because of the toothpicks they use to divide the segments. Each length has six pieces and is hung using a buli grass string. Local Products What learner should know 2. TALABA (OYSTER) Oyster is the common name for a number of different families of salt-water bivalve molluscs that live in marine or brackish habitats. In some species, the valves are highly calcified, and many are somewhat irregular in shape. Residents and visitors grilled some 100 sacks of oysters grown in coastal barangays of Baleydaan , Mona, Pangapisan and Cayucay where, according to Gilbert Rabadon , an aquaculturist at the City Agriculture Office, the best oysters in Pangasinan are produced. Alaminos City consistently produces about 15,000 sacks of oysters of the Crassostrea iredalei species every year and are sold to local restaurants in Pangasinan and as far as Metro Manila. The regular and uninterrupted production to the fact that the barangays were never affected by red tide. The Crassostrea iredalei oyster species grown here marketable sizes that measure five to seven inches big with a diameter of three to five inches. Local Products What learner should know 5. PUTO CALASIAO Puto Calasiao is a little bite-sized Filipino rice cake from the town of Calasiao in the province of Pangasinan. Calasiao is known for its abundance of this delicious delicacy, and it is one of the city’s most prized food products. This specific sweet sets itself apart from a conventional puto due to the incorporation of fermentation, although some ingredients remain the same. Instead of using soaked rice water, the semi-glutinous rice used in the puto calasiao dish is fermented in clay jars for a short period of time. The finished result has a particular sweetness to it and a chewy consistency all the way through. PATUPAT The native Pangasinan delicacy known as patupat is another sweet treat made with glutinous rice and is particularly well-liked in the municipalities of Pozorrubio , Balungao , Alaminos, and Manaoag . The sticky rice that goes into making this traditional treat is wrapped in coconut leaves that have been woven together. It is prepared by cooking it in a sugarcane juice that has been brought to a boil. After being cooked, it is gathered into bunches, then tied off, and let to air dry and drain. Patupat has been showcased on the annual Pozzorubio town festival, further cementing its reputation as a valued food product. Local Products What learner should know 6. BINUNGEY Binungey , commonly known as Bamboo Rice Cake, is prepared using sticky rice and coconut extract. Sweeteners such as sugar, mangoes, and coconut jam go well with it. In the Pangasinan language, the term “ nungey ” means “cooked in bamboo.” To make binungey , bamboo tubes are stuffed with glutinous rice and coconut milk and then steamed over an open fire. The process of preparing this dish may be laborious due to the fact that if the fire is too intense, the bamboo will be charred, and if the fire is too mild, the rice may not be fully cooked. It is an adaptable, tough, and sturdy fish that can survive in confined spaces, so it is regularly bred on fish farms, which is the reason why it is widely available all over the Philippines. The flavor of milkfish is distinctive and mild, best paired with complementary ingredients. Bangus is usually cooked in soups, fried, grilled, barbecued, stuffed or stewed in various spices, ginger and vinegar, but the varieties of bangus -based dishes are numerous. Local Products What learner should know 7. BAGOONG Bagoong (pronounced “bah- goh - ong ”), or bagoong monamon , is a fish sauce used as a popular condiment in the Philippines. It is also used in Hawaii and other regions of the Pacific. Lingayen bagoong is one of the best products in the country, but it needs to undergo more development to compete with Thailand’s fish paste in the Asian market, Councilor Judy Vargas said. Vargas counted 27 major producers in the town, excluding small, home-based factories, and they are continuously improving the taste, aroma and packaging. The local bagoong used to be sold only in milk cans (locally called “ litsi ”) in the wet markets. It is now sold in bottles or pouches that line the shelves of upscale supermarkets and groceries. One producer, Juanito Palisoc , 68, said DM’s factory was the first to process and bottle boneless bagoong in the town. Others followed suit, including Palisoc and his wife, Lily, who own JE’s Bagoong Products, which now packages other items such as sautéed shrimp fry (“ ginisang alamang ”), fish sauce (“ patis ”) and siganid (“padas”). E-KAWAYAN FARM The E- Kawayan Manufacturing Plant is housed in the five-hectare MVC Techno-Demo Farm in Barangay Tangcarang , Alaminos, in the province of Pangasinan. The Engineered Kawayan project is turning the city into a bamboo capital of Pangasinan, producing products while pushing for massive cultivation of the plant. The sustainable development project re-engineers bamboo into lumber materials to make and produce wooden products. Engineered bamboo is produced by laminating two or more layers of crushed split (or veneered bamboo), which can be turned into engineered floors, table tops, furniture, and more. They also use a computer-guided laser printing machine for imprinting text on the bamboo wood. The project started with keychain products.
