The Arabian Empire in North Africa The Arabs formed an Arabian empire in North Africa and established the Muslim religion. The Arabians predominate Morocco, Algeria, Spanish-Sahara, and Tunisia. The sultan is the highest religious leader in the Arab community.
Five Practices of Islam Believers They recite a prayer: “There is no god but Allah, and Mohammed is the prophet.” They pray five times a day, turning their faces toward Mecca. These prayers may be said anywhere, even in the street or in a bazaar. They give alms ten percent of their of their income to the poor. They keep the holy month of Ramadan during which no food or water may be taken between dawn and sunset. They make a pilgrimage to Mecca at least once in a lifetime Islam “submission” or “resignation to the will of God”
A Moorish Banquet A feast for honorable Muslims
Rules in Participating in a Moorish Banquet Guests sit on the cushions lain on the floor or on low divans.
They are given a large white napkins that they lay on their knees. The left hand is not to touch any other food. Each person gets food with his right hand from a common dish because there is no individual service. They only use the thumb and the first two fingers to hold food. The fingers are not supposed to touch the lips when putting the food into the mouth.
The menu consists of the following: The first course A pale green soup consisting of almonds and fish
The second course A whole roast lamb served intact called mechour .
The third course Another roast lamb served with another sauce that differentiates it from the first
The fourth course A pastilla that takes no less than 48 hours to prepare. This is a pie 3 feet in diameter
The last main course The rice meal called couscous . It comes at the end of the meal for the heavy eaters.
The last course A cake stuffed with dates or sweet oranges or tangerines
As at the beginning, the guests are given mint tea the universal drink of northern Africa at the end of the meal Pork is forbidden for Moslems and fish is not generally served in a Moorish banquet.
