KEFIR PANCAKES

+ 1 cup organic all-purpose flour
1 TBSP organic sugar (or substitute pure maple syrup, honey, date paste,

over-ripe banana or apple sauce)
1 teaspoon baking powder (aluminum free)

1/2 teaspoon baking soda
1/4 teaspoon Redmond Real Salt

+ 1 large eg:

+ 2 TBSP melted butter or coconut oil

出 ne larga bowl, whisk together the flour, sugar, baking powder, baking soda,
and salt.

2. In a separate bowl, whisk together the kefir, egg, and melted butter or oil until
well combined.

3. Pour the wet ingredients into the dry ingredients and stir until just combined.
Do not overmix; the batter may be s (hy lumpy.

4. Heat skillet or griddle over medium heat and lightly grease with butter or oil.

5. Pour about 1/4 cup of batter onto the skillet for each pancake.

6. Cook until bubbles form on the surface of the pancakes and the edges begin
to look set, about 2-3 minutes.
