It is estimated that more than 60% of the world population is Fe deficient, over 30% Zn deficient, 30% I deficient and 15% are selenium (Se) deficient . This situation is attributed to shift in cultivation towards cereals, crop production in areas with low nutrient availability and consumption of food crops with inherently low nutrient concentrations. Cereals are inherently low in micronutrients, compared to many other food crops and their consumption as staple food leads to micronutrient deficiencies. The deficiencies are exacerbated by a lack of animal products or fish in the diet (Gibson 2006).
