CHAPTER 1

BACKGROUND OF THE STUDY The popularity of coffee as a beverage has been increasing over the years, with many people relying on it to start their day or keep them going throughout the day. However, concerns have been raised about the negative effects of excessive coffee consumption on health, such as increased heart rate, anxiety, and insomnia (Grosso et al., 2017). As a result, there is a growing interest in finding alternative beverages that can provide similar benefits without the negative effects.

The study collected data on two main aspects of the respondents - their age. This information helps in understanding the demographics of the participants involved in the study. The survey questionnaire was distributed using a floating questionnaire method. This method involves making the questionnaire available to respondents in various locations or through different means to increase the chances of participation. The results of the study indicated that the coffee made from coconut grounds was found to be acceptable and comparable to traditional coffee in terms of aroma, taste, and overall quality among Senior high school students. This suggests that the students perceived the coconut ground coffee to be on part with traditional coffee in terms of sensory attributes. . INPUT PROCESS OUTPUT Feedback Conceptual Framework

ASSUMPTIONS This study is based on the assumption that the respondents will provide honest responses to the questionnaires one on one interview, ensuring that the data gathered by the researchers is valid and reliable for correlation. Furthermore, the research study is considered to be timely and relevant to the respondents, leading to outcomes that will contribute to a foundational understanding of the topic

SIGNIFICANCE OF THE STUDY 1. To researchers they will have a better understanding of what end consumers need for the success of the beverage, as well as the potential size of the market for the coconut coffee drink. This insights will help other parties to develop their products and to determine their market strategies 2. Students: By conducting the researches, the students can find themselves in the world of various drink options and may lead them to swap the habitual one for the new aspiring healthy drinks, like coconut coffee.

3. To teachers can hold discussions regarding the subjects of nutrition, health and consumer behavior that are connected to the topic of choice, thus, the learning process becomes more practical and connected to reality. 4. School Administrators: The research could help those in charge develop information to resolve this decision and it could well present with a healthier coconut coffee beverage to be offered at the school cafeterias by comparison to others.

SCOPE AND DELIMITATIONS The scope of this study is to determine the acceptability of coconut coffee among Senior high school students. The research will focus on exploring the preferences and perceptions of Senior high school students towards coconut coffee as a beverage option . The study is delimited to Senior high school students at Reina Mercedes National High School to specifically understand their acceptance and interest in coconut coffee

Research Design The qualitative method of research was used in this study. It was the most appropriate method for the study since it aimed to identify the Acceptability of coconut coffee among senior high school students

Data Instrument      The major instrument used to gather the needed data was a one-shot interview questionnaire which was contained of two parts: Part I composed of the personal  optional background of the respondents; Part II served as Acceptability of coconut coffee among the senior high school students.        Moreover, the major instrument used in gathering data was an interview questionnaire and student-made test.  It was prepared in terms of the study, which draws out the necessary information that best reveals the student-respondents’ profile, such as, name age ,.       To determine the experiences of the students, a 10 -item interview questionnaire was made and administered smoothly. This survey type of questionnaire is about the development and acceptability of coconut coffee to help the researchers improve their product.

Selection and Description of Respondents The respondents of this study are Senior high school students of RMNHS, S.Y. 2024-2025. This comprises students of overall enrollees of the Reina Mercedes National High School.    

Data Gathering Procedure In order to gather the needed data, the researchers will distribute questionnaires prepared for the selected senior high school students of Reina Mercedes National High School. . Furthermore, the researchers aim to know the acceptability of coconut coffee among the senior high school student

CONCLUSION In conclusion, the acceptability of coconut coffee among Senior High School students at Reina Mercedes National High School is influenced by various factors. These include taste, perceived health benefits, popularity among peers, effective marketing, availability, and affordability. For coconut coffee to be embraced within the school community, it must meet these criteria and align with the preferences and expectations of students. However , several barriers may impede the widespread acceptance of coconut coffee in a high school setting. These barriers include individual preferences for other beverages, health concerns or allergies, lack of awareness regarding its benefits, and cultural perceptions surrounding coconut products. Introducing coconut coffee into the school setting also carries potential educational impacts. tudents may gain insights into agriculture, health, economics, and environmental issues through practical experiences related to coconut cultivation, processing, marketing, and consumption. Thus, the introduction of coconut coffee has the potential to enrich the educational experience and foster a deeper understanding of interconnected issues within the school community

RECOMMENDATIONS Introduce coconut coffee as a regular option for students which are not allowed to drink too much caffeine and use this as an alternative coffee for them. Monitor the sales and feedback of coconut coffee to ensure its sustained popularity and acceptance. Inform students about the health benefits of coconut coffee and ensure the price is affordable so all that all the students have the opportunity to purchase it.
