Classification of Desserts

Baked Desserts

Cakes Perhaps the most popular dessert of all time. It contains a combination of flour, sugar, eggs, butter or oil, leavening agents (such as yeast or baking powder), and sometimes milk or water. It’s topped with sweet and creamy icing for the ultimate treat.

Cookies Made from flour and sugar, cookies are usually small, flat, and round. To create sandwich cookies, just place a small amount of jam or icing in the middle of two cookies. Cookies can also be cut in elaborate shapes, perfect for different seasons and events.

Biscuits A different variety of baked goods that includes scones, biscotti, and more, biscuits are in a category all their own. Biscuits are typically made denser than cake, but they can vary in texture from soft and chewy to hard and crispy.

Pastries Pastries include pies, cobblers, and anything else made with a light and flaky bread crust. They’re often filled with fruit, chocolate, nuts, or spices to elevate the flavor profile of the treat. Apple pie is the quintessential American pastry.

Frozen Desserts

Ice Cream Ice cream is a frozen dessert typically made from milk or cream that has been flavored with a sweetener, and a spice, such as cocoa or vanilla, or with fruit.

Sorbet A frozen dessert made using ice combined with fruit juice, fruit purée, or other ingredients, such as wine, liqueur, or honey. Generally, sorbets do not contain dairy products.

Sherbet A frozen dessert made from water, sugar, a dairy product such as cream or milk, and a flavoring – typically fruit juice or purée, wine, liqueur, and occasionally non-fruit flavors such as vanilla, chocolate, or peppermint.

Cold Desserts

Gelatin Dessert Gelatin desserts are desserts made with a sweetened and flavored processed collagen product (gelatin). 

Cheesecake A kind of rich dessert cake made with cream and soft cheese on a graham cracker, cookie, or pastry crust, typically topped with a fruit sauce.

Mousse Mousse is made by folding aerators into a base. These aerators can be whipped cream, meringue (egg whites + sugar), pâte à bombe (whole eggs and/or egg yolks + sugar), or a combination.

Fried Desserts

Doughnuts A type of deep fried dessert food made out of dough or batter. It is a small ring of sweet leavened dough that has been fried or sometimes baked.

Churros A cinnamon- and sugar-topped fried dough from Spanish and Portuguese cuisine, made with choux pastry dough piped into hot oil with a piping bag and large closed star tip or similar shape. Churros are similar to doughnuts, but they have ridges.
